Bottle from HMart, Naperville. Haven't delved into sakes for some time, and my first time in this style. Pours milky-white and still. Slightly sweet white wine nose. Taste has strong alcohol up front. The coconut milk description is very apt. Kind of a yeasty note, like an unfiltered beer. Flavor is more upfront than the delicate taste I simply remember from previous sakes. Wish the mouthfeel was a little thicker too help keep the alcohol from jumping out at me.

My New Year's Beer! Popped at midnight CST. Bourbon SMELL is there, but lighter than expected. Deep black pour, tan head turns out to be rather fizzy. BUT a plenty boozy taste at the first sip. Black roast malts just as to the barrel aged bourbon impression. Only slight stickiness, considering the malt and alcohol involved. In fact, it finishes just a little drier than your usual. BA Imply.

I am trying out just a taste of one more pickle beer, because I am admitting I get to like them. Golden color of an American light lager in the glass with just a slight bit of haze, and a thin ring of foam around the edge. I find the nose to be rather nondescript, but this is after two hits of barrel-aged beers. I do not care for pickles normally, but I can pick up a rather well done pickle taste. I am getting some vinegar as well, but I am going to say that could be expected when you're doing a pickle beer. I have had some pickle beers that turned out to be rather creamy like some sours will be. But this one just goes straight in for the sour, and straight in for the vinegar. As sour, pickle beers go, this one sits in rather nicely: nice and sour, and nice and pickley.

Deep brown color, thin tan ring of foam. Subdued Cherry nose competing with Belgian specialty malt Bill. Not as "thick" as the Bell Witch I just had. Just a nice light cherry taste with a slight bit of tart. Pleasant, not excessive.

Next-to-last call at the fine establishment. Deep black pour, a bit of tan foam ring. Bourbon nose and maple syrup combine for a nice woody impression. Some of it spills as I'm walking around trying to find a seat, and it's quite sticky. Great BA story taste, though I'm not sure how to detect that it's a true.

Rating #2800! "Bottled on 3/3/06" No more sense holding on to this any longer. Big syrupy malt smell under the cap, usual for an older cellar beer. (Ahh! Just saved the glass from being accidentally knocked over! Tragedy averted!). A lot of maple sugar in the nose. Ruddy brown color, poured with very little head. Taste has more maple syrup to it. Very little hop left to this, which is not a surprise. Makes up for it with plenty of sherry and alcohol, and no oxidation. Some bitterness in the back of the tongue helps keep the brew from getting too sweet. So, not the hop bomb that a fresher version of this might be, but it has developed enough character to remain worth saving for 8 years. Good luck me getting hold of a fresh bottle of this for comparison, but not to worry, I have a 2006 90 Minute IPA left to check against some 2012’s I got at $3 a 4-pack. And therein lies a tale…
