Can from Beer Cellar Palermo. My haven, till it closed early for Xmas...

Crazy fluffy, uneven, sticky whipped head. Ever slight protein haze, medium yellow pour.
It mostly smells onion-y(which is my Strata giveaway), as well as some even keel earthy-white grapefruit.
Frothy as fuck. Powdery, new-age hazy flavor, ever slightly sweet, over a more traditional earthy bite. Follow through is more west coast, with medium acid, thinning out over some pine with a touch of citrus oil lingering.
Stiff for just 7%. Soft but ample carb. The slightly pushy acid really helps cut all this oniony nonsense.

Small to medium place buried behind the Lumber yard venue & across the street from the scrap art place. Not much street appeal. Only street parking, careful. This isn't downtown Brevard but a try-hard, cool arts district.

The address used to be a We-Work type place, that's why there are two sets of doors that lead to blocked of stairs. You'll see some tiny two person booths appear on your left & some industrial double doors that open up into the main space. Bathroom & bigger booths on the immediate right all the way down. Awkward Tim Burton-like murals of their pets on the wall. Tanks on the left & finally the mid-sized bar near the back, closer to the rear Lumber Yard entrance. Feels a little like a coffee shop with some good early afternoon sun. I liked the mini booths but my wife didn't. There are some bar stools at the source but they were stuffed with lots of locals. Only saw a couple tourist groups. I want to say this place still isn't that busy. Came on a Sunday after brunch.

Friendly Wambles husband & wife operation, though I thought I met a different bartender the one other time I came here. Fifteen taps, with four of them dedicated today to treatments of the base offerings. Very traditional styles but usually with a slight twist in the hops, attenuation or strength. Good crispy game but the XPA was crazy dry & flavorful. They offer you a sample if you don't seem certain. I may have rated one like this that was specifically not my thing. There's a fridge on the right that will have a few 500ml hand bottles for $13-16 but it's usually pretty sparse. Pours themselves are $7 for true pints in nice glassware, $5 for a half, default short pour for treatments. No food but there's a silly expensive pizza place up the block & a good brunch spot in the same building. The bathroom is spacious enough & clean.

Easily the best beer in Brevard & regionally. Sort of a dead zone going south, so it isn't much of a title. Forty minutes to Sierra Nevada. Asheville is about an hour north, Sylva is 1.15 NE & Greenville SC is 1.15 SE.

Single from Beer Cellar Palermo. Tucked away in my luggage, then the fridge. Best within six months?

Mojito glass at home. Hazy, dirty brown pour with some low but dense ivory foam.
Smells of sticky toffee, creme & a touch of dark fruit.
Sticky caramel with some bitter earthy tannins & a backend of date.
Thick, a bit hearty, integrated abv is punching back a bit.

Just okay.

500ml bottle via Press online. Week in the fridge & poured into my trusty mojito glass.

Settled, pale medium gold, not much head.
Smell is gentle white tea with some faint citrus over a slightly acidy apple base. Soothing.
Sharp apples, medium tart. Lemon oil, orange citrus, slightly herbal, faintly astringent. Restrained, earthy tea flavor melds well with the acid.
Slightly crabby, oily feel, medium low carb, overall bright.

Very well done flavor meld on a solid cider base.

Pounder via Press online. Mojito glass at home.

Pale amber, headless can pour.
Vanilla, oaky, drying false malic front.
Juice box, long floral, earthy apples, false vanilla, false oak, solid bittersweet, lots of sulfites. Very confusing. Well preserved.
Low co2, heavy body, sweet initially with a drying finish.

Some okay apples with a bunch of shelf stabilizers. This sucks.
