Belgian Style Sour Ale with Cherries
Tahoma is very similar to the Devils in process. The only difference is the base beer and the varietal of cherry, so much of this applies to both Krieks. To add depth and complexity, we use a blend of both house yeasts. The clean fruitiness of the Abbey, and the subtle fruit but dry, lager like breadiness of the Kölsch play well with what we’re going for. The base beer is allowed to ferment all the way through. As the beer is being racked onto cherries in the totes, a portion of Brett beer is added to aid in the inoculation. Then we seal em up and send them safely to the warehouse. The rest is out of our hands. We have to let go, and let it do its thing. If we’ve done our job right, and kept things clean, everything should be fine. We check on it from time to time to see how it’s progressing, but let it sit. The anticipation is wonderful…

Pale, hazy golden pour. Instant big, airy head fades fast. Tart, fruity nose. Sweet, but not necessarily strong cherry essences. Taste also builds on the tartness. I guess the Rainier cherries lend their own character to this, making it more of a straight up a sour than the traditional kriek.

Muddy, acetic, light cherry, tart, bit overripe, mellow cherry, apple, light spice , maybe a touch butyric but overall i like this, rustic though it might be.

Opaque blond color. I don’t get the cherries, but I get an aggressive sour beer, with a lemony character, some other citrus fruits, and a good body strength, so a very good choice if you look for a sour.

On tap at St. Augustine with Ash during Double Mountain tap takeover. Pours a cloudy blonde with a white head. Aroma is sour, bretts, fruity. Taste is fruity, very smooth, barrel, fermented fruits, cherries. Very good.

2015 375 ml bottle from Tavour. Nose is light funk, yeasty, a small hint of my favorite Ranier cherries, and a bit of bubblegum. Hazy urine yellow with a small quickly disapating off f white head. Flavor is lightly tart and funky with a moderate sweetness.

Bottle from Whole Foods in Portland. Hazy golden/yellow with a white head. Aroma and taste of cherries, funk, citrus and some wood. Refreshing and with a tart finish. A pleasant one.

[1/31/16] Bottle sample at a hotel lobby bottle share during RBWG 2016 in Santa Rosa. Cloudy shiny yellow color. Fruity aroma with a bit of latex and alcohol. Sour, fruity. Medium-bodied.

Bottle shared at the the rbwg 2016. Bright yellow straw coloured pour with a small white head. Aroma is set dog, socks, apricot. Flavour is composed of tangy tangerine. Bitter orange. Zesty orange, apricot. Tart and funk. Palate is medium sweet, tart light acid, tangy. Crisp. Highish carbonation.

Bottle shared during RBWG 2016. Pours lightly hazy yellow with a creamy white head. Tangy citrus nose, some lemon, raspberry. Light sweet flavor with a little plastic, harsh lemony acidity, pale wood. Light bodied with spritzy carbonation. Sharply acidic on the finish, with more lemon, light plastic, alcohol warmth. A little harsh but not bad.
