L’Ultima Luna is aged in Amarone barrels, filled only for 2/3 of their volume to favor the oxidation of beer with air (a tribute to the oxidized wines of Andalusia). The beer ages at least 24 months, up to 48 months. For the 11th years of the Brewery a special edition of 60 months has been produced. What fascinates in this beer is the exceptional complexity of tertiary aromas due to oxidation (leather, Madeira, dried fruit, cocoa, wood, toasted almond).

[3/4/11] Bottle at ACBF 2011. Clear deep amber-brown. Aroma of malt, caramel, cookies and soy sauce. Sweet caramelly flavor with lots of malt, fruits and some soy sauce. Finishes slightly drier. Medium-full-bodied.

Bouteille @ ACBF 2011.

Looks like dark Armenian brandy - and that doesn’t look bad either. Overwhelming, superb, brandy-like nose, with tutti frutti on brandy, rich and onctuous. Fruity, woody, alcohol and fusels, and... everything you’ld ask from a perfect pousse-caféSips viscous-oily and warming, again like cognac; palate is off the charts. Aftertaste has some more winey notes, rather than brandy. This is simply... overpowering. And yet it’s oh so much more drinkable and refined than, say, a Samuel Adams Millenium...

Expensive 12.7oz bottle pours murky copper brown with meek white head. The aroma is moldy warm grapefruit, lime, tart red wine, faint wood notes and a sense of sticky malts. The taste is similar with a quick pulse of sweet malts followed by moldy sun warmed citrus, red wine, dry tannins and mild prune to fig undercurrents. This has a water thin mouthfeel too. A soured barleywine but it doesn’t work as well (for me) as others I’ve been lucky enough to try.
