Surprise, Surprise โ€“ We Got Nasty with Yeast! ๐Ÿ˜ถโ€๐ŸŒซ๏ธ๐Ÿ˜ถโ€๐ŸŒซ๏ธ
This oneโ€™s a little wildโ€ฆ weโ€™ve been playing around with some experimental yeast strains, and while it might not be everyoneโ€™s vibe, thatโ€™s the beauty of trying new things. Cool stuff happens when you experiment.
.
For this beer, we teamed up with @escarpmentlabs โ€“ a Canadian yeast lab known for their innovative, high-quality strains that fuel creativity for brewers all around the world. At first, they attempted a cross between two strains, but things got weird during propagation. So instead, we pivoted to a classic approach: a unusual blend of yeast strains, where both strains co-ferment and bring their character to the ๐ฉ๐š๐ซ๐ญ๐ฒ.
.
We brewed this one especially for @farmhousefest ๐Ÿงก . Yeah, saisons arenโ€™t usually our thing, but we wanted to bring something wild and hoppy to the table. Enter: a blend of Ebbergarden (kveik) + Foggy London (English-style). The result? Something completely different from what youโ€™d expect from us.
.
To amp it up, we dry-hopped with ๐‹๐จ๐ซ๐š๐ฅ ๐‚๐ซ๐ฒ๐จ and ๐ˆ๐๐š๐ก๐จ ๐†๐ž๐ฆ. To deliver a mix of floral, herbal, and citrus notes with a touch of bright cherry, red fruit, and a bit of candy sweetness.
.
The base keeps things light and clean, a mix of wheat, oats and rice flakes, letting the ๐ฒ๐ž๐š๐ฌ๐ญ and hops shine.

473 ml can. Pours a dull hazy gold with light head. Aromas of mangos, watery orange juice, orange pith, and wheaty malts. Flavors of mangos, chalk, lemon, a bit of lupulin powder and wheaty malts. Luckily not too thick a mouthfeel. A poorly labelled, run of the mill Hazy.

On tap at Threefold. Pours nearly opaque yeow with a white head. Tons of orange citrus on the nose. Flavour is super chalky, dry orange juice, tons of pith, some damp wool. Very poor.

Opaque yellow. Ok hop aroma. Some hop burn, though. Malts are kind of awol, the result being that would could have been a decent showcase for underutilized varietals ends up wasting them.

Poured from the tap @ Threefold. Hazy yellow with small white head. Unique blends of yeasts, has a light kviek quality, lightly creamy, floral citrus hops with a light berry character round it out. Okay.

On tap at Farmhouse Fest 2025, pours an opaque yellow with a small white head. Aroma is chalky, with plenty of hopburn, a touch of dankness, and chalk. Flavour is harsh, with lots of chalk, egregious hopburn, and few redeeming qualities. Not as egregious as some hazies but itโ€™s quite poor.
