The original impetus for this collaboration came from the filming of an upcoming episode of BBQ With Franklin, which will air on KLRU-TV, Austin PBS. Aaron Franklin set out to explore the use of smoke in beer making for the episode. We wanted to branch out beyond the traditional use of smoked malt and opted to take a local ingredient that was in season — Texas figs — and use it as a medium to impart characteristics from Franklin’s barbecue pits into the beer. Local figs were caramelized with heat and cold smoked at Franklin Barbecue. Aaron charred a portion of the figs, which imparted a subtle burnt, almost leathery, character to the beer. The base beer was designed to integrate the flavors and aromas of the smoked figs with our house fermentation characteristics, which stem from mixed culture fermentation with a blend of brewer’s yeast, wild yeast from the Texas Hill Country, and native souring bacteria. While we typically brew beer with a sizable majority of pilsner malt in the grist, in this case our Head Brewer Garrett Crowell opted for a base of Dark Munich malt, which he felt complemented the smoky and lightly caramelized character of the figs.

Sample thanks to Grumbo! Pours amber, small white head. Not very smoked, quite sweet, some fig skin notes and general overripe fig fruit.. not the best I've had from Jester King unfortunately

25/2/2023. Bottle from Hopsters, Ipswich. Shared at SBGP1. Pours clear amber with a frothy white head. Aroma is figgy, caramel, biscuit, malt, yeast, berry, hedgerow, slight smoky edge. Moderate sweetness, medium bitterness, light tartness. Medium body, average carbonation. Drying finish. Good but perhaps didn't justify the price tag.

Panda at home, thanks to Graham/Grumbo, 09/03/23. Hazed reddish orange with a thin off white cap that escapes to the edge. Nose is tarte fruit rinds, red berry skins, damp oak, herb, hedgerow. Taste comprises dried fruit rinds, light smoke, dried fruit rinds, herb, modest funk, grains, shar red berries, vinous trace. Medium bodied, fine carbonation, light drying close with a mellow acidic spike. Not bad.

Sample courtesy Grumbo. Small head with short duration. Color is amber. Aroma and taste are sour malt, citrus, little caramel, fruits and notes of hops. Light sour finish.

Bottle, shared by Chris. Pours red brown. Biscuit, strawberry, fig, smoke, light funk, minerally. Spritzy creamy body. Good.

Draft at Common Table. Pours a clearish copper with a finger of off-white foam that dissipates. Fig and prune on the nose with some faint apricot and mild toasted caramel aromas. Smooth on the palate, a bit of grain alongside more fruity flavors. Lingering prune and fig on the finish.

Bottle. A- Subtle caramel, wheat, mild florals. A- Copper color, hazy liquid, off white head. T- Mild bitterness, slightly malty, straw, light florals, subtle fruitiness. P- Medium body, average texture, average carbonation, balanced finish. O- Don't get smoke or figs which is the reason I got this. I love both and wanted a ridiculous amount of smoke and figs. Got neither. Not bad but disappointed.

13 April 2019. At First Timternational Beer Tasting, Ghent. Cheers to Ghent beer crew! Pours clear amber with a lasting, small, frothy, off-white head. Aroma of lemon peel, expired yoghurt, cheese, sour grape, hay, sourdough, smoky wood & charcoal even, unripe plum, dried figs. Taste is medium funky sour, lactic & yoghurty, almost cheesy, but equally fruity (prune, white grape), bitter tones of wood, smoke, dried figs, yeasty & bready accents too, hinting at cow fodder & barnyard which is less appealing, but the core smoke character makes up for that. Dry, tart, lactic finish, some grassy hops, more wood & dry figs, faint smoke retronasally. Medium body, oily texture, soft carbonation. Unusual to say the least, hard to get your head around as well; there’s a lot going on here but I’m not the biggest fan of it.
