Our first foray into the "wild" world of brewing. We aged this Belgian-style ale in red wine barrels with Brettanomyces, Lactobaccilus, and Pediococcus for 18 months. The result is a tart, funky, and complex beer that is still quite easy on the palate. Enjoy from your favorite chalice at 45-50 degrees Fahrenheit.

Bottle during RBWG. Pours a cloudy orange with small white head that lasts. The aroma is strong oak, stone fruit, lemon zest. Thin mouthfeel with nice stone fruit, light oak, lingering sourness, very nice.

Bottle thank to Jack the Sipper. It pours cloudy deep orange with a small beige head. The nose is rich, earthy, must, sweat, toasted brown read, soft orangey goodness and grapefruit rind. The taste is crisp, tart, orange rind, Irn Bru, tangerine, stewed orange, some acidity and wood with dry, tart finish. Medium body and fine carbonation. Crisp and juicy. Works for me.

Bottle shared at CBC Clerkenwell - thanks to Jack. Pors unclear gold with a creamy khaki head. Interesting aroma, some tart lemon, herbs, honeycomb. Light sweet flavor with some floral qualities, moderate acidity, pale bread, clover. Light bodied with average carbonation. Moderate tartness to finish, more lemon, slight acidic bite. Not bad.

Unripe persimmon, sharp cheddar, and oak nose. Hazy copper, thick yellow head with little retention. Crabapple flavor with an introduction of distinct cranberry grows to a crescendo of wonderful sourness. Light body, very tart, moderate carbonation. If ever there was a fall sour, it is this. Fantastic!

50cl bottle pours a hazy, dark gold with some ringing white head. Nose has wood pulp, sour notes, cherry, malt vinegar. Flavor has a mix of dried fruit, pulpy citrus, vegetal. Tart, acetic finish.
