Our ode to summer. By implementing a sour mash procedure in our kettle an intense lactic and sour character emerges. The beer is then fermented with our lager yeast. Finishes fruity, citrusy, dry, and quite tart.

Bootle from Table and Vine, West Springfield. It pours lightly hazy gold with a small white head. The nose is soft, cracker, white bread, some farmyard funk and some fresh yoghurt. The taste is crisp, lightly bitter, tart, clean, light minerals, fresh lemon, green apple, sherbet and lactic acid with a dry finish. Light body and fine, moderate carbonation. Light, tart and super easy-going.

Bottle from Drum Hill liquors. Hazy pale straw color with a huge bubbly white head that shows some surprising retention. Lemony tart aroma with plenty of bready pilsner malt to back it up. The flavor is tart but not overly so and still lets some of the pilsner and lager character through. Light bits of fruity flavors come through the edges. Medium to light body with a moderate to high level of carbonation. Damn that is light tart and refreshing, and man did that glass get empty quickly!

Pours a hazy straw from a bottle. Aroma of some light citrus, very little funk. Flavor is almost like a wheat beer, but then with a slight sour kick toward the end. A good beer.

BOTTLED ON DATE!!!!! Woohoo! 5/13/15 drunk 5/30/15
Lemony and very lightly lactic with an odd green onion note on the end. Perhaps just a spoiled milk note that is similar to cooked onions?? Don’t really know where I’m going here, but it’s a bit different than expected. Not starkly dry, with some sweet honey notes, borderline caramelly. Very much a sweet and sour thing going on.
Incredibly expansive carbonation is the most notable aspect, giving an almost soda water-like feel to it while mild lactic notes are drowned in plentiful honey and tons of wheat. Mostly just wheat and water on the finish, with light honey and still more of that oniony/garlic note.
Interesting. There’s nothing bad going on here. It’s just not what I’ve come to expect from a berliner weisse. Tastes more like a mildly lactic hefe. My main problem is that it’s just got too much body. Not nearly as refreshing as it could be if it was more dry and much more crisp.
