Spruce cones and resin infused Grape ale with Sideritis grape skin.
Every September we turn to our winemaker friends for inspiration! Their side products, like grape skins, are always packed with flavor and aromatic phenols, it's such a shame to just distill them into a spirit! So each year we get them and we steep them in a different wild beer and try to reverse engineer natural wines! This year we were lucky enough to get the Sideritis grape skins from the famounts organic winery Tetramythos! Earlier in summer, we hiked with our friend Trifonas into the high mountains near Kalloni village. There we gathered spruce cones when their resin lvl was at its peak, bursting with the raw power that fuels new seedlings to grow! So we infused a reverse engineered wine with resin, just like Retsina, though the resin was not harsh, varnish like from pine but woody and candy like from spruce trees!
The brew smells like old spruce wood full of mycelium with playful resin notes! Taste is bone dry with medium body, medium tartness and interesting tannins both from the grape skins and the spruce cones! Sweet notes of candy and resin linger as you breathe in a long, tart and tannic finish!

Can. Murky pale golden. Herbal, tea, funky, grape. Full, warm and long, this is actually quite nice but has a bit of a alcohol burn to it.

Can courtesy of Kostas, Kykao brewery, cheers Kostas. Had this Saturday 14th February at the Manglham 2nd Winter Tasting listening to Kelly Lee Owens - Dreamstate. Pours gold, excellent clarity, but then I look again and see a hint of haze, next to no head, this is certainly a little resinous, a little floral, dry, fresh, and really good. Drinks incredibly easy for a 12% beer/wine hybrid, a little touch of fumes come back down the nose. I really like this but at 12% also super pleased to share this. Score 7.8

Can at the Mangled Ham 2026 day 2, huge thx F&L! Almost clear golden body, head gone soon. Odd aroma, bit resinous, some sourish white wine notes. Quite well carbonated taste, some glue, some resin, alcohol heat - warming, some citrus, white grape notes. This is so unusual. Never having had Retsina (knowingly) this is quite a unique experience. I don't not like it, but I also don't yes enjoy it terribly much. Love its concept to bits though! More stuff like this!

Can. Pale, light grey golden, tart, vineous, some spice, honey, wood, mellow to sparkly medium, very interesting flavors.
