In mid 2025 we were invited by Boundary to brew a beer with them to help celebrate their 10th birthday, which was an Export Stout.

This January we asked them over to London for a return leg, and brewed this Single Stout (otherwise known as Porter).

We decided that we wanted to make an historic Irish Stout and found a recipe from1883 that fit the bill. With just Pale, Amber and Black malts it is dry, toasted and fruit forward. Plummy flavours, with a burnt toast finish, on a body much lighter and more refreshing than our regular core porters.

One of the quirks of this recipe is the addition of some black malt to the boil and it has come through beautifully, giving the beer an almost maple syrup aroma, and a dry wood tannin-like follow through.

Bottle from Raynville Superstore. It pours jet black with a medium fluffy khaki head. The aroma is rich and robust, dark roasted malt, umami, liquorice, burnt toast, dark chocolate, cacao nibs, meaty, espresso coffee, toasty spice, charred oak, dried fruits, black bun and toasted fruit cake. The taste is smooth, dark roasted malt, bitter - sweet dark chocolate, umami, liquorice, cacao nibs, natural processed coffee, toothy, burnt toast, muted ash, restrained alcohol presence, toasty spice and a puff of pipe tobacco. Finish is dark and decadent roast. Fulsome body, moderate carbonation and velvety mouth feel. Rich and robust. Nice depth of flavour and exquisite balance. Nicely done.

Bouteille 33cl @ Borger Bottles, Bottled 16/02/2026, BB 16/02/2027, batch# 2944.3163.

Black beer lasting tan head. Chocolate aroma. Some chocolate. Some malt in the mouth. Some bitterness on the finish. Some chocolate truffle flavour. Quite hoppy on the finish. Its not thin but the mouthfeel is expected to be fuller. Its fine but a little light. Chocolate flavour is good though.

Bottle from Against The Grain. Dark brown body with a beige head that gradually fades. Low carbonation. Faint lacing. Aroma of Twiglets, wood and dark chocolate. Flavour of ash and ark chocolate. Medium body with a smooth mouthfeel. Soft fizz. This is very dry and ashy. I liked it.
