Harvest IPA
Hop Knife recognizes the time-honored tradition of hand-harvesting hops at the peak of maturity. At the end of fermentation, the beer flows through our HopCyclone releasing a bounty of preserved citrus rind, pineapple and tropical aromas.
We taste: orange zest, honeysuckle, pineapple

Crisp light amber and copper coloured body with a clear glow and a thinnish tan head. Aroma of pungent resinous and grassy hop scent along with some light malt and a touch of sugars - nice and balanced with the emphasis on the hops, of course. Medium-bodied; Strong hop flavour at first with resin, grass, floral and herbal elements all at play here. Aftertaste shows a subdued sweetness, some light caramel along with a more earthy and noticeable malt character throughout. Overall, a good fresh pale ale with some nice flavours and an understated but appreciated complexity. I sampled this twelve ounce bottle purchased from Whole Foods in Washington (Foggy Bottom, Eye Street), DC on 29-October-2015 for US$2,49 sampled at home in Washington on 19-January-2016.

12 ounce bottle into pint glass, bottled on 7/24/2015. Pours slightly hazy deep golden amber color with a 2 finger dense and rocky off white head with great retention, that reduces to a nice cap that lingers. Nice spotty soapy lacing clings down the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of big grapefruit, tangerine, pineapple, peach, mango, melon, lemon zest, orange peel, citrus rind, pine, light honey, toasted bread, and floral/grassy earthiness. Very nice aromas with good balance and complexity of bright citrus/tropical/piney hops and moderate bready malt notes; with good strength. Taste of big grapefruit, tangerine, pineapple, peach, mango, melon, lemon zest, orange peel, citrus rind, pine, light honey, toasted bread, and floral/grassy earthiness. Moderate amount of pine/citrus rind bitterness on the finish; with lingering notes of grapefruit, tangerine, pineapple, peach, mango, melon, lemon/orange rind, pine, light honey, toasted bread, and floral/grassy earthiness on the finish for a good bit. Damn nice complexity, robustness, and balance of citrus/tropical/piney hops and moderate bready malt flavors; with a great malt/bitterness balance and zero astringent hop flavors after the finish. Moderate amount of dryness from bitterness as well. Medium carbonation and body; with a very smooth, moderately sticky, and light creamy/bready balanced mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish. Overall this is a damn nice harvest IPA. All around great complexity, robustness, and balance of bright citrus/tropical/piney hops and moderate bready malt flavors; and very smooth and easy to drink. A very enjoyable offering.

Draft @ Yardhouse, Lynnfield, MA. Crystal clear gold with lasting head in a pint. Aroma is floral with huge amounts of pine underneath. Bitterness is short after the sip and ends clean. Big time floral and pine with supporting malt bill. On a mostly clean palate this surprised me, very nice.
