Incorrigible celebrates the beauty of mischief. Wild yeasts and bacteria run free in our sour-aging cellar, the House of Funk, creating vibrant sour and acidic character in this delicate, yet complex wheat beer. The refreshingly tart session beer will tease your palate with a subtle, layered nuance

Draft at Beer Run, 7/1/14. Pours a clear pale yellow color with a thin frothy white head. Decent head retention. Aroma of bright, tart lactic sourness, wood, mild charred wood and tannins. The taste is white grapes, tart lactic sourness, wheat, lime jello. Medium bodied, lingering tartness. Nice beer.

750 mL bottle. Pours a clear bright golden with a short-lived white head. Tart, sour green grape aroma with a bit of brett character. Flavor is sour, generally a lactic sourness, saltine cracker and bretty funk, green grape. Really very nice!

22 ounce bottle into tulip glass, bottled on 10/3/2013. Pours fairly crystal clear golden amber color with a 1-2 finger fairly dense white head with solid retention, that reduces to a thin spotty cap that lingers. Light spotty lacing clings around the glass, with a fair amount of streaming carbonation. Aromas of sour green apple, lemon, lime, pear, white wine, wheat, hay, straw, vinegar, musty funk, oak, light leather, light pepper, and yeast earthiness. Damn nice aromas with good complexity of fruity/funky yeast ester, oak, and light-moderate malt notes; with good strength. Taste of sour green apple, lemon, lime, pear, white wine, wheat, hay, straw, vinegar, musty funk, oak, light leather, light pepper, and yeast earthiness. Fair amount of fruity/earthy tartness on the finish; with lingering notes of sour green apple, lemon, pear, white wine, wheat, hay, straw, vinegar, musty funk, oak, light leather, and yeast earthiness on the finish for a good bit. Damn nice balance and complexity of fruity/funky yeast, oak, and light-moderate malt flavors; with a great malt/tartness balance and zero cloying flavors after the finish. Medium carbonation and light-medium bodied; with a very smooth, crisp, and fairly acidic mouthfeel that is nice. Alcohol is very well hidden with minimal warming present after the finish as expected of 4.9%. Overall this is an excellent Berliner weisse! All around great complexity and balance of fruity/funky yeast, oak, and light-moderate malt flavors; and very smooth and crisp to drink. I enjoyed this one a lot.

Bottle. Clear straw body, thin-medium off-white head. Light lactic sour and sharp nose with white grape and green apple. Sharp, biting body, white grape with vinaigrette and a touch of sulfuric wet socks funk. Light-bodied and refreshing.
