Bottle shared by TheCheeseMan. Pours hazy caramel color with off white head. Sweet caramel malt aroma with some Fantome funkiness. Funky yeast flavor with fruit, spices, pepper and tartness. Medium body with mild carbonation and a dry finish.

1 pint 9 4 oz bottle. Cloudy red brown, explosive head that shot the cork across the bar. Light tan head. Aroma of pumpernickel bread and yeast. Taste of German black bread with sour finish. Incredible,

Reddish-brown colour. Cloudy. Liquoricey with crazy spice nose. Light pear notes, again very assertive liquorice/anise, nutmeg and spice. Probably a little too much, even for Fantome.

Throwdown. Cloudy copper color. Funky sweet and sour aroma. Hint of balsamic vinegar. Hints of fruitiness, raisins and apricots. Smooth and rounded sweet fruit malts.

Bottle at Spuyten Duyvil. Pours copper/amber with a strong, big fluffy head. This head just doesnt want to go away. Aroma is all herby and spicey. I mean I like Fantôme for these aspects but it can be a real hit & miss kind of thing. Here it isnt as much of a hit compared to lets say Dark White. Lots of rosemary, just think earthy, dry and green, mixed with beer. Taste is spices mixed with a rather strong Belgian candi sugar sweetness. Nice but nothing special and their are better examples from the brewery in similar beers.

Thanks to Footbalm for sharing this rare beer. This is a dark red saison. Some sediment in the bottle and glass. Considerable carbonation. Aroma has yeast and fermenting fruit and some barnyard as well. This beer is on the sour side but it is not very sour for a sour beer. Very nice, more fruit, some balsamic vinegar, weird yeasty flavors. It is a shame I will probably never see it again.

Thanks to Eyedrinkale for bringing this out to the Heavyweight Open House - I’ve often discribed beer as being "chewy," but I never meant it literally until now - I swear there were chunks of herbs floating in this (and it wasn’t just my glass; I looked in others) - whether they were herbs or not, my brain registered a strong herbal/spice character in this beer (rosemary, coriander, even some white pepper) - barnyardy, but not really funky (if that makes sense) - hay, grass, earthy characteristics - another interesting brew from Fantome.

750 Bottle Poured a medium orange amber with ancie frothy coarse head. Mild spicey peppery notes in the aroma. Slightly dusty, earthy flavor and fairly dry feel. Pleasant example of a style that usually doesnt do it for me. Thanks Jordan and Chad for this one.

Bottle shared with the Montreal crew on 11/6/2005. Tan/amber/beige with a slight tinge of auburn with a rapidly dissipating off-white head that leaves little to no lacing behind as it recedes. Unfiltered, with only marginal carbonation activity in the glass. The aroma has an odd mix of very dry, salty toffee, peanut skins, dry chocolate and a bit of tartness coming from the yeast, presumably. Lots of dusty, heavily drying, old yeast makes it difficult to capture many elements in the aroma, not to mention the strength of the aroma is pretty light relative to a Fantome beer. An uplifting, sweet, clean note of malt finishes off the aroma, however, so I go in to the flavor intrigued. The flavor begins with caramel and dry toffee, light raisins and tart yeast. A light touch of brown bread, maybe heavy cream/vanilla and then more dry, dusty yeast. Finishes lightly sour, with a touch of light roast suggestions. Body is medium and the mouthfeel is thinned out, too much so. Not quite watery, but just lacking the tight carbonation I appreciate in other Fantomes. Oily/slipper texture as well. No alcohol apparency.
