Imperial smoked Stout aged in bourbon barrels.

Wood Burner imperial smoked stout aged in bourbon barrels. Over the years we have brewed a plethora of bit stouts and porters, and the idea of brewing an imperial smoked stout was something we had been kicking around for a while. When an open brew day presented itself, we knew exactly what to do. The base stout focuses on rich caramel and chocolate notes with a deep savory/smoky backbone. The entire batch found its way into bourbon barrels, where it rested for over a year. An enticing combination of sweet and savory, with waves of dark chocolate and vanilla that wash over the palate. Cheers to stoking the creative flame in all of us!

Brown and a bit inky. Sweet, has a bit of barrel, and a bit of a molassesy note as well.

Black color, frothy beige head. The Bourbon aroma is stronger than the dark caramel and smoke. Rich caramel and malt flavor, too much Bourbon, that overwhelms everything else, sweet, then smoke.
Good, but cloying in large quantities, excessive, ungraceful showoff.

375mL bottle, pours black with a small tan head. Aroma brings out lovely bourbon barrels upfront, followed by medium smoke, and light roast. Flavour is complex, with notes of bourbon barrels, medium roast, and light smoke. Big, heavy and viscous on the palate. Excellent.

Bottle - Sweet dark bourbon and some smoke. Deep jet brown with. Small brown head. Sweet bourbon, vanilla and barrel notes, buttery pecan and nice long finish. Smoke is a little lost in the taste.

Draught@CBC2015. Very deep brown, close to black colour with a small beige head. Aroma is vanilla, alcohol, some roasted malts, a bit sweet malts as well as some slight ripe fruitiness. Flavour is roasted malts, vanilla, caramel, fudge a wee bit of alcohol and a bit burnt sugary notes. Balanced, big and bold.

375ml bottle pours a translucent brown with some cloudy, grey head. Nose has maple, birch, smoke, caramel, vanilla, mild anise. Flavor is sweet, maple, birch, caramel, molasses, light smoke, vanilla, charred wood. Full bodied but smooth.

Some roast and a lot of bourbon. Black pour with good head and lacing. Some caramel. A little too much barrel for my tastes. Bittersweet finish. Bottle shared at tasting.
