Derivation is our series of Barrel-Aged Imperial Stouts in which we brew several recipes, age them in a variety of barrels and blend them before bottling to add depth and structure to this massive style of beer.

100% Wheated Imperial Stout aged in Wheated (12yr Weller) Bourbon Barrels.

Barrel aged on Ugandan vanilla beans for 15 months.

On tap at the brewery. Black with almost no head. Intensive dense bitter chocolate. Thick cocoa. Bourbon. Oily. Not nearly too sweet. Full bodied. Just beautiful.

Draught at Brewing, 10/1/23. Dark, clear, no head. Nose has remnants of vanilla, super mellow bourbon, dark chocolate, hint of oxidation (cardboard). No alcohol. Soft, rich, well attenuated and drier than when fresh, no doubt, which is nice. Small amount of pleasant vanilla, dark chocolate and caramel-bourbon. If you are expecting a 2022 BBT texture of a 10 year old beer, this isn't it, but I think it's aged wonderfully and still has plentiful deep malts. Excellent barrel character, no alcohol or excess sugar.

Bottle 750ml. shared at [ A Day To Sink All Sea Shepards tasting. ], Brussels, Belgium. [ As Side Project Derivation Blend #2 ]. [ White Wax ]. Clear dark black brown color with a small, frothy - fizzy, good lacing, mostly lasting to diminishing, beige head. Aroma is heavy malty, roasted, chocolate, vanilla, alcohol, cacao, light coffee. Flavor is moderate to heavy sweet and moderate bitter with a long long duration, alcohol, chocolate, vanilla, coconut, roasted, cacao. Body is medium to full, texture is oily, carbonation is soft, finish feel is light alcoholic. [20160917] 9-4-9-5-18

Bottle shared at A Day To Sink All Sea Shepards tasting. Full lineup of 1-6 + DB. Black with a ring tan head. Aroma of big vanilla, chocolate, caramel, toffee, soy. Flavour is heavy sweet, moderate to heavy bitter and big umami. Full bodied with a thick chewy texture and soft carbonation. Having tried this against the rest I can see why this is considered the best. Superb. [17-09-2016]

750 ml bottle shared at the original Chez Moeder Lambic’s cellar. Thanks Anton! Black color with beige brown head. Malty aroma, roasted, chocolate, cocoa, vanilla, coconut, light spicy notes, wood. Moderate to heavy sweet and light bitter taste like aroma. Almost full silky creamy body with soft carbonation.

Extreme & manifold thanks to fux!!! 750 ml. bottle sampled. Black with small mocha head. Nose is insanely rich sweet mocha, chocolate, coffee, huge pralines & sweet coffee. Taste is amazing mocha, chocolate, coffee, sweet, huge pralines, vanilla,… Thick rich, decadent. Otherworldly good.

@ A day to sink all seasheppards. Thnx for sharing, everyone !! Pours black, no head. Smell is vanilla. Silky. Taste is intense, bit bitter, vanilla. rather sweet. complex, somehow, between pure extremism, this is balanced.

Bottle thanks to Dustin. Pours motor oil black with small tan head that lasts. The aroma is strong vanilla, chocolate, roast, wood. Thick mouth, strong chocolate, vanilla, roast, wood, bourbon, chewy, very impressive.
