This wonderful wild yeast strain is a slow burner, it likes to hang around and eat everything it can. If it is left to its own devices is will eventually begin to eat the cellulose in the wood of the barrels… What this translates into is a super crisp and fresh double IPA, extremely well-attenuated, allowing all the hop character to come to the fore.
This wild yeast actually preserves hop character as well and as it likes to hang around, it is still actively evolving the beer as it ages – producing different flavour compounds and then consuming them only to recreate different flavour compounds!
What we are left with is an outstanding Double IPA which is remarkable fresh and also develops beautifully.
The vanilla pods add something a little special to the character of the beer. Helping produce an elegant, creamy, soothing confection of aromas and flavours. It’s like a rich dessert in a glass.

Old rating - A 330ml bottle from Love Wine, St Saviour, Jersey. A outstanding DIPA, aromas and tastes of sweet earthy citrus bitterness at the start then some funk. Finish is dry crisp bitterness. Hides the ABV well.

Bottle from Wild Beer Wapping Wharf, Bristol. Pours hazy orange with a white cap. Aroma: grapefruit, pineapple, peach, bubblegum, brett funk. Taste: moderate sweet & bitter, brett funk, grapefruit, apricot, pineapple, peach, bubblegum esters. Medium body with light carbonation.

Nice slightly bubbly-creamy mediumlasting head. Aroma is slightly dry sour-ish funky, leafs, old citrus peel, brett, hops, minerals, bark, grass, sawdust, oak, alcohol, citrus. Taste is dry and slightly harsh grassy, weeds, harsh hops, bark, minerals, old citrus peel, brett, oak, alcohol, sawdust, leafs, citrus. Medium to longlasting bitterness, harsh grassy mouthfeel. Not really my cup of tea.

330ml bottle. Pours hazy gold with a thin head. Aroma is pineapple hops with some Brett. Taste is dry. Mango and pineapple hops. Strong bitter finish.

33cl bottle. Angleterre. Golden color, thin white head. Ripe fruity aroma, hops. Feels really old. No bretta at all. Oranges, mild hops, ripe fruits.

Bottle from Hopology Nottingham. Golden hat with a white head. Aroma citrus and slight Brett. Sweet slight sour to mid bitter. Medium body.

Bottle in garden, 7th July 17. Pours clear. Aroma has slight Brett and citrus. Taste is light Brett and malts, not much hops at all, and not that much tart Brett either. Not great.

Bottle sample at a tasting at troubles place. Thanks Max & Stas. Cloudy yellow. Aroma of fruity hops, a bit of brett. Flavor is quite dry, moderately bitter, with an alcohol note. Medium-bodied. Nice.

At a tasting, thanks, small bubbly head, cloudy orang color, stinky onio flavor with sweat minerals and flowers in the back, mineral and vanila flavor with some paper, strong and a bit abraisive bitterness. Drinkable but not too exciting.
