Brett + Hops + Brett

This wonderful wild yeast strain is a slow burner, it likes to hang around and eat everything it can. If it is left to its own devices is will eventually begin to eat the cellulose in the wood of the barrels… What this translates into is a super crisp and fresh double IPA, extremely well-attenuated, allowing all the hop character to come to the fore.

This wild yeast actually preserves hop character as well and as it likes to hang around, it is still actively evolving the beer as it ages – producing different flavour compounds and then consuming them only to recreate different flavour compounds!

What we are left with is an outstanding Double IPA which is remarkable fresh and also develops beautifully.

The vanilla pods add something a little special to the character of the beer. Helping produce an elegant, creamy, soothing confection of aromas and flavours. It’s like a rich dessert in a glass.

Bottle at Drie Dorstige Herten. Golden pour. Aroma of citrus, mild tart, caramel and grassy hop. Flavor of citrus, grassy hop, mild tart, pineapple, caramel and only subtle brett. Would have expected more brett, this is more like a mildly tart fruity dipa. Very nice though.

330ml bottle from the Brewery Online Shop. Pours murky yellow gold with no head. Aromas of brett funk and over-ripe citrus fruit. Taste is sherbet, brett, very dry finish.

Level 42 bottleshare, Santa is flying past below! Thanks to Fergus for this 2016 edition. Hazy gold beer, thin pale cream colour head. Palate is smooth and semi dry, decent fine carbonation. Smooth malts. Savoury bitter brett. Minerals. Light banana. Modest citrus. Airy savoury finish. Not exactly awash with hops is it?

Bottle at level 42 share. It pours cloudy gold with a thick white head. The aroma is rich, juicy, sweet, musty, quite bright, loads of fruit, foamy banana candy and farmhouse bread. The taste is bitter - sweet, loads of sweet banana candy, juicy fruits, earthy brett, musty, peppery spice and some alcohol boost. Medium body and fine carbonation. Came across a bit sweet really. I prefer the previous funkier edition.

Bottle shared in London - thanks to Fergus. Pours hazy yellow-gold with a frothy, white head. The nose holds juicy tropical fruits, tangerine, pale bread, orange, melon. Medium sweet flavour with some alcohol, bread, pine, tangerine. Full bodied with fine carbonation. Resinous finish with some rindy bitterness, boost, pale bread crust. Not bad.

Bottle shared on Level 42 19/12/2016. From BottleDog. A bright yellow straw coloured pour with a loose white head. Aroma is sweet lemon, orange, pear,. Flavour is composed sticky sweet, orange, lemon, dirty pine. Little hint of funk. Palate is sticky sweet, moderate carbonation. Lingering banana sweets. Firm bitterness.

Bottle split at L42 Xmas Shit Shower, thanks to Fergoose, 19/12/16. Light haze on a golden orange pour with a decent off white covering. Nose is cantaloupe melon, apricot, straw, light funk, pine, orange wine gums. Taste comprises pine resin, tropical fruit medley, grapefruit, light spice, sraw, orange pith, mango. Medium body, fine carbonation, semi drying close with a juicy hop tang and very mellow brett infuse. Solid DIPA brett scrapee.
