Our second beer for the rainbow project
Ideas flew back and forth across the equator centered around the colour Blue: using e numbers, icebergs, berries, potatoes, even a dye used in brewing which turns your pee blue (sadly poisonous...)! But in the end we went far more abstract and took the classic French black & blue steak as our inspiration.
Thus was born Black and Blue – a raw ale, un-hopped and un-boiled, fermented and aged in re-toasted bourbon casks for an extra charred flavour alongside brisk acidity from fermentation with our house cultures in barrels for over 6 months.
Every good steak needs a sauce to go with it so we introduced white, green and black peppercorns into the mash to accompany our raw ale.

330ml bottle. Minimally cloudy, orangey golden colour with small, frothy to macropore, diminishing, white head. Tangy, fruity, funky aroma with a vinous and oaky touch, spicy hints of pepper. Taste is dry, tart, fruity, hints of vinegar, grapes, mild spicy hints of pepper, green peppercorns predominate, some white pepper as well. Nice.

330ml bottle, it's been in the fridge a good while. Pours clear golden orange with a dissipating white head. Aroma: sour lactic, wood, lemon. Taste: dry, acetic acid, white wine grapes, green apple, lemon, light funk. Light body, light carb, puckering dry finish. Very sour, it's a bit weird but quite enjoyable

KØLF 271017. Golden-orange color with an off-white head. Aroma is sourness, pepper, yeast. Flavor is sourness, pepper, yeast, acidic citric, funk, wood. Very easy drinkable.

Bottle. Clear golden body with a big off-white head that fades. Strong and nice aroma of slightly acidic citric fruit with a fine mild funky touch. Flavor has a distinct and delicious balance between acidic fruit, some wood, pepper and funk. Fine balanced body and long lasting aftertaste. Very nice and pleasant sour beer.

Bottle. Turner’s, Sheffield, I think. Clear as a bell, light amber gold. Loads of fast rising bubbles manage to sustain a bubbly, lively, white head. Nose has white wine vinegar. Wood shavings. Some mouldy lemon. Taste is dry and vinegar sour. Light, apple sweetness on the lips, maybe. Light body. Lots of acidity. Brisk, burp inducing carbonation. Acidic finish. Pretty harsh sour, with little in the way of balance. Not for me.

Pours amber with a quickly fading head.Nose shows lemon pith, elderflower, herbal notes, soft woody oak, grapefruit and cucumber.Flavours include more cucumber, lemon pith. Aggressively sour.

0.33l bottle. A quickly away-fizzing head on this one, leaving a mild cloudy darker golden colored body. Smells really nice though. Peach sour with woody tones. White sour pear, lots of apple. Red berries also in this one. Smells surprisingly nice this. Made me look at the bottle text. Complex and interesting stuff to smell at for sure. Tastes good also. Spicy and mild sour. Some sorrel, a rush of oaky dryish wood. Peppery and stingy. It has a mild oily texture in the mouth and it's just about average on the carbonation. Long really pleasant sour grape like tail with lots of old wood. Quite nice and really different this. 31.03.2017

330ml bottle. Pours hazy gold with no head. Aroma is ashy burnt vinegar. Taste has sour yoghurt and vinegar to start. Very sour vinegar finish with an ashy finish.

Pale golden color, white head with short duration. Aroma is yeasty with sourish and farmhouse notes. Flavor with a decent sourness, enjoyable vinegar notes with light fruitness and some citrus hints. Sourish on palate with light yeasty hints.
