Saison Lees was made using a turbid mash of rye, oats, unmalted wheat and pilsner malt. Fermented for 14 months in old cider barrels using 100% wild cider lees. Dry hopped with Styrian Goldings.

Bottle, 750 ml, courtesy of Max. Shared with him and JFK10000. Cloudy golden, large white head. Citrus, some lemon, apples, funk, some cellar, moderate sourness, lots of carbonation. Medium bodied.

Bottle, by way of a trade. Cheers Tom. Pale gold. Light haze. Thin, lasting, bright white head. Nose has apple cider lolly. Pressed dessert apple. Fresh sawn wood. Goat’s milk cheese. Hint of new leather. Loads of lemony brett in the background. Taste has a baked apple sweetness, with crisp, bright, lemon tartness. Smooth and creamy mouthfeel, with a complete lack of acidity. Foamy carbonation. Tart, fruity, apple sweetness to finish. Sublime, in a word.

Bottle at Partizan. Thanks to Fergus. It pours cloudy yellow - gold with a medium white. The aroma is rich, fresh, funky, musty, white grape, gooseberry, green apple, barnyard and oak. The taste is crisp, dry, tart, bitter, shebert, lemon sherbet, musty, funny, hay, spice, gooseberry, barnyard, tannin, chamonmile tea and oak with a drying finish. Medium body and moderate, foamy carbonation. Well rounded with great depth. Exceptional.

Partizan Bottleshare. Very hazy gold beer, small pale cream colour head. Palate is light and semi dry, reasonable fine carbonation. Light malts, modest sweetness. Nice light brett. Little ripe tangy lemon. A light sourness runs throughout, more of a light tang. Easy going.

Bottle shared at at the partizan rot box tasting. Many thanks. A hazed golden yellow coloured pour with a a lasting frorhy white head. Aroma is lovely white grape, cider, apple, saison yeast, nice complexity, white grape. Flavour is composed of crisp, wheaty grains, apple, mellow saison yeast,. Palate is peppery, rocket, frorhy, spritzy carbonation. Tangy white grape, gooseberry. Horsey funk.

Bottle shared in Bermondsey - big thanks to Sr. Fr0g. Pours hazy gold with a small, frothy white head. Big farmhouse funk in the nose, lemon, biscuits, nips of apples. Light sweet flavour, quite dry and quenching, with apple peel, tangy lemon, a bit of barnyard funk. Light bodied with massaginga carbonation. Drying and quenching to finish, more tart lemon, apple skins, mellow funk. Great stuff. Love it.
