Using ingredients found on archeological sites (different cereals, hazelnuts, raisins, pomegranate, resins, honey), this project is supervised by Patrick McGovern (university of Pennsylvania).
At Del Borgo the beer is fermenting in clay amphorae.

Cloudy golden color with no head. Malty, fruity aroma with spices, honey and plum. Sugary, malty taste with some sour elements to it. Sweet citrus, grapejuice and some grain. Very interesting and quite different.

9.2% based on archaeological records and fermented in terracota amphora! It pours a cloudy gold with little to no head. A strong aroma reminiscent of red wine is present. The taste is super tart, a bit sweet and sour. It is made with raisins, honey & pomegranates which come through in the flavor, sweetness then tart and sour with a bit of acidity. Really interesting stuff.

A dark brown ale with a thin brown head. In aroma, sweet dark fruits with molasses, licorice and phenolics, alcohol warmth. In mouth, sweet dark fruits with burned caramel, with molasses and alcohol burn, licorice, well done.

06/05/2013 Open Baladin (tap). Arancia-rame, lievemente torbida, schiuma virtualmente assente. Corpo medio, carbonazione soft, alcol incredibilmente nascosto. Non male davvero!
