Leo, Teo e Sam sono andati alla ricerca dell’origine della birra, ricreando un’audace ricetta ispirata alle antiche bevande fermentate. Usando ingredienti comuni sulla base dei ritrovamenti archeologici ogni birrificio ha scelto un metodo di fermentazione diverso. A Borgorose, l’Etrusca, l’abbiamo fatta riposare in grandi anfore di terracotta, come quelle ritrovate negli antichi siti etruschi

Using ingredients found on archeological sites (different cereals, hazelnuts, raisins, pomegranate, resins, honey), this project is supervised by Patrick McGovern (university of Pennsylvania).
At Del Borgo the beer is fermenting in clay amphorae.

Bottle @ fonefan tasting. Clear golden with a white head. Aroma is sweet, malty, honey, bretty and yeasty. Flavor is quite sweet and moderate acidic. Dry and moderate acidic finish. 050714

Bottle @ fonefan tasting. Medium head with medium duration. Color is golden. Aroma and taste are brett, cheese, flowers, citrus, malt and hops.

Bottle from Taniguchi. Very tangy, citrus nose, acidic, yogurt, very fruity and interesting. Raisins and honey. Deep honey gold, lace. Very tangy, sour really. Lemon and orange and yogurt, raisin, honey. Interesting stuff. A bit funky. Tart and refreshing, definitely hides the alc. Quite nice. Sour and complex.

0.33l bottle @ Baran. Not much of a head on this one. The little translucent thing that was there on the pour quickly fades. The beer itself looks slightly clouded and kinda dark orangy golden. Smells of sour olives with tones of honey bees, sour woods, sour red berries, and it's almost salty in a way. Lots of unique aromas here and I'm quite enjoying it. It's really soft on the bubbles almost what you can call flat and it has a thick oily feeling in the mouth. Reminds me a lot of a Flemish red. A good amount of woody white wine grapes also. Combined with sour green apples? Lots of interesting stuff going on here. Would not mind having this again! 28.02.2014

[10/16/13] Bottle at Luppolo12 in Rome. Hazy orange-amber. Sourish fruity aroma with some vinegar and honey notes. Sour flavor with some funk. Vinegar, light sweetness, honey notes, a bit of pomegranate, lemony notes and an acidic burn in the throat. Medium-bodied. A bit strange but decent. Alcohol is well-hidden.

Hazy gold beer, very hazy. Small white head. Palate is crisp and dry. Pretty sour with apricot and lemon flavours. An odd counter balance of lactose underneath. Finishes crisp and slightly acidic. Floral and herby notes emerging. Unusual but drinkable.

Sampled at Kristiansand Ølfestival. I first tasted this together with the Le Baladin bottle and decided that the flavor where similar but a tiny bit more outstanding and better from the Baladin version. Then we did a blind test and I picked the Birra del Borgo version as the best. There is a difference, but the main flavors are the same and which to prefer is depending on a lot more than just the flavor itself. So I feel the honest thing to do here is just to copy the best score from the two of them. Nice and exiting beer all together.
Unclear orange body with a rather small white head. Nice and complex aroma of pale malt, apple, spices, nuts and a hint of honey. Flavor is also complex, feels a bit apple acidic without really being a sour beer, diferent kints of fruit, spices, nuts and malt. Fine body and a long slightly cider apple kind of acidity. Really interesting with complex freshness.

Clear bright orange beer, no head, just a few big bubbles. Aroma: vegetables, pretty bad, earthy, bit metallic, weird. MF: soft carbon, medium body. Taste: sour lemony start, citric, bit fruity, sweet ripe to overripe fruits, bit watery. Aftetaste: citrus, little bitter, orange peel, lemony, sour ending.
