(Previously labeled Blackberry Lambic). Blackberry is fermented by wild yeast and aged in oak casks for nearly a year, which creates a tart, complex beer. We then add whole blackberries, grown in Indiana, giving the beer a sweet, berry aroma that blends nicely with the tang of sour beer. The beer is bottle conditioned, which adds a zesty and refreshing carbonation. Blackberry is the perfect drink to share with friends over a plate of good cheese and fresh fruit.
(Old description) In the spring of 2006, I brewed 300 gallons of top-fermented beer using wild yeast to create a Belgian-style Lambic. We conditioned the beer in oak casks and then initiated a secondary fermentation in the casks using whole fruit from Huber’s Orchard in Starlight, Indiana. Bottle @ Hallinghansens US Tasting, Odense. Pours dark purple with a off white head. Very tart nose and flavor. A bit of berries. Dry and very sour. A bit one dimensional and out of balance.

Orange-amber, hazy body - without head. (Aggresively) sour aroma of barnyard, wine: nice and complex. Heavily sour, moderately sweet, weird flavour: not bad but somewhat out of balance.

Bottle from the 2010 batch. Pours with a deep murky pink to purple hued body and minimal head. Later pours have berry pulp in them. Aromas are deeply funky, floral and perfumy. Vanilla and berries, oak and acidity. Flavors are extremely dry and very acidic. Tons of malic acid from the fruit. Berry juice, with no sweetness accompanying it (as expected). Lightly earthy, berry pulp. Tons of tannin with light vanillin. Very dry overall. Sharp finish. Medium bubbles. Puckering.

Cloudy pink - amber beer, slightly pinkish head. Sourish nose that induces involuntary mouth watering! Crisp dry palate. Sour and tart without being lemon juice. Citrussy sharpness in which just a small glimpse of blackberry comes through. Frothy dry finish, leaving an acidic aftertaste. Not my favourine style but this is very drinkable.

Der säuerliche Antrunk ist gut karbonisiert, die vorhandenen Fruchtnoten sind stark und aromatisch, zudem fügen sie sich gut ein. Im Verlauf kristallisiert sich die Säuerlichkeit noch mehr heraus, die Fruchnoten gehen so zum Ende allerdings schon fast unter. Dennoch ein ausgewogenes saures Bier mit gutem Fruchtanteil – empfehlenswert. /12/11/12/12/12

750ml Bottle thanks to JohnGalt1. Pours out orangish/red topped with a white head. Aroma was of sour, tart, berries, and light malt. Taste was mostly the tart berries and a little of the oak.

Bottle shared by someone at Jackie O’s but cannot quite remember who, sorry but thanks! Poured a clear gold with minimal white head that dissipated completely. Aroma was full of nicely balanced sour blackberries. Flavor began tart and grew to become sour with blackberries throughout.

Fruity and sour, though not very intense compared to many fruit sours. I definitely prefer tarter. After a few sips, the blackberry flavor comes out well. Very mild funk. Well-carbonated, which was kinda odd. Some light malt notes, a bit too much really. Sort of an easy drinking fruit sour.
