INSPIRATION: Inspired by so many things it's hard to believe. While tasting the colab that Brasserie Thiriez and Saint Somewhere brewed & listening to the song "Stars" by Hum on repeat, the idea of Train to Mars finally transpired. A modern, hoppy version of a "Biere de Mars" to be brewed in January and released in Mars (March). CONCEPT: While at Chez Thiriez, we scoped out his hop selection and realized we could actually brew with both American & French hops and have the names spell out MARS; Mosaic, ARamis, and Simcoe. Well, they ended up being a perfect blend that provide the delicate yet exotic aromatic quality of Train to Mars, but used with enough restraint to accompany the Thiriez house yeast strain. Train to Mars isn't exactly "Radical" but it is our favorite brew so far and interestingly enough a third of the batch is aging in Cote du Rhone barrels accompanied by locally sourced honey and Brettanomyces; sounds a bit more like Get Radical, doesn't it? REALIZATION: By far our most collaborative effort yet. Proudly brewed (annually) with our friends at Brasserie Thiriez in Esquelbecq, France in January .

250 ml. draft @ Chez Moeder Lambic Fontainas. Clear golden, solid creamy white head. Nose is very clear, bone-dry floral hops, light lime peel. Taste is clear, hugely dry, bone-dry floral, pepper, light citrus, faintest hops, barely fruity. Hugely dry body. Amazingly clean & drinkable. Reminds me almost a bit of Taras Boulba. Amazing beer. The best beer I have had from France so far.

Bottle. Pours filthy and full of huge floaties, large off-white head, creamy and slow to dissipate with good lacing. Color is hazy golden amber. Aroma is grain, grains of paradise, hay, straw, pepper, light citrus notes. Light sweet and light bitter. Medium body.

Bottle. Hazy to cloudy golden color, fluffy white head. Bready aroma with earth and black pepper. Taste is earthy, peppery, light funk, dry finish. Tasted side by side with a Saison D’Epaeautre and the D’Epeautre won, but this one is tasty too.

4 oz pour on draft at ChurchKey. Hazy golden yellow with off-white head. Aromas of floral, hay, citrus, light malt. Tastes of floral, citrus, bitter hops, light stone fruit. Medium body with a dry finish. Nice hoppy saison.

At a tasting, thanks, medium stable bubly head with some lacing, cloudy intense lemon yellow color, aroma of orange blossom, mineral notes and hints of honey and paper, soapy flowery flavor with fruity hints, citrus ,soap bitterness, slightly coarse. Interesting.

Bottle sample at a tasting at Max’s place. Thanks Cris. Cloudy yellow with a white head. Aroma of floral and citric hops, some spiciness, and some fruitiness. Dry flavor, mildly spicy, fruity, with yeast, and nice nice citric and floral hops with good bitterness. Medium-bodied. A nice one.

Bottle at chriso’s. Pours Hazy gold with a foamy white head. The nose holds wheat bread, ripe lemon, grain, hay. Medium sweet flavor with nips of plastic, hay, rindy citrus. Medium bodied with fine carbonation. Finishes fairly bitter, a little harsh, with grass and plastic, hay. So so.

75 cl bottle. Pours clear and golden huge white head. Aroma is peachy and crisp hoppy. Mild estery and mild fruity. Crisp hoppy and dry finish. Dry, bitter and slight herbal. Bitter and crisp hoppy finish.

Tap at the jeffrey. Yellow pour white head. Nose is tropical hops and some yeast. Tastes of tangerine, lemon, bready, slight pine, sweet malt, and crackers. Fairly bitter with hint of barnyard on finish. Drying. Pleasant beer.
