INSPIRATION: Inspired by so many things it's hard to believe. While tasting the colab that Brasserie Thiriez and Saint Somewhere brewed & listening to the song "Stars" by Hum on repeat, the idea of Train to Mars finally transpired. A modern, hoppy version of a "Biere de Mars" to be brewed in January and released in Mars (March). CONCEPT: While at Chez Thiriez, we scoped out his hop selection and realized we could actually brew with both American & French hops and have the names spell out MARS; Mosaic, ARamis, and Simcoe. Well, they ended up being a perfect blend that provide the delicate yet exotic aromatic quality of Train to Mars, but used with enough restraint to accompany the Thiriez house yeast strain. Train to Mars isn't exactly "Radical" but it is our favorite brew so far and interestingly enough a third of the batch is aging in Cote du Rhone barrels accompanied by locally sourced honey and Brettanomyces; sounds a bit more like Get Radical, doesn't it? REALIZATION: By far our most collaborative effort yet. Proudly brewed (annually) with our friends at Brasserie Thiriez in Esquelbecq, France in January .

Draught at Lord Hobo, 7/10/15
Light tangerine colored body is lightly hazy and topped by a small but fairly dense, well-retained white head.
Dry, peppery phenols give way to soft apricot fuzz, dry moss and even a touch of light pine as crackery malts and just a touch of minimally sweet caramel-like maltiness fills in the gaps. An obvious American-hopped Belgian ale nose, yet it’s more reserved despite all of the more bitter, acidic, louder hop notes. No real bold yeast fruitiness/funkiness/cellariness of your typical saison (not that Thiriez is really known for that anyways). Almost comes off as just a hoppy Belgian pale ale. Good balance to the nose if not exactly strongly aromatic, but with no flaws or alcohol.
The flavor is crisp, dry and has light malt elements (baked white bread, crackers) that, despite being stretched quite thin against the phenols and hops, do a pretty good job of keeping the beer from being thin or astringent. Peach, pine, apricot and tangerine all embolden the flavors through the middle and the finish ends in a peppery Thiriez yeast signature. Quite nice, with tight carbonation and a definite experimental nature (actually kind of love the light pine bitterness from the simcoe). Maybe a touch too much of the somewhat scratchy, crackery malts, as they’re exacerbated by the hop bitterness and dry, peppery phenols. Rating is against a hoppy, Belgian ale, not a to-style saison.

Golden color with a white head, medium duration and nice laceowrk. Aroma has notes of belgian yeast with spicy notes and fruity notes. Flavor is slightly bittery with a dry final.

Bottle shared from Mi Orge Mi Houblon. Pours Hazy golden with a big bubbly white head. Aroma of peppery saison yeast, citrus, fruits, light funk and biscuit. Flavor is light sweet and moderate bitter with a nice juicy fruity palate. Light medium bodied with light carbonation.

Capped 750 from Star Grocery in Berkeley, CA. Pours translucent gold with a white head. The aroma is to die for. Mixed fruit esters, very light earth, and an ethereal aspect. Med body or nearly. Flavor is dry, bitter, mixed fruit esters, "burnt rubber"(not a bad thing here), and earthy/yeasty/mild barnyard. Thiriez. Ok, so this is apparently a contract brew, but frickin amazing. Thiriez. Absolutely delicious, and clearly quite underrated.

Pour is a blonde with a large white head. Aroma is a dry cracker malt with some fruit. Lots of floaties and tons carbonation. Flavor is again a nice bone dry malt with some barnyard and dry mustiness. Finish is dry and palate cleansing with some notes of honeysuckle. This is a solid and very dry saison.

Sample at Birch And Barley/Churchkey. Slightly hazy yellow-gold color with a thin white head that evaporates quickly to an outer ring. Partial rings of lacing on the glass. Aroma of tropical fruit, hops and malt. Light-bodied with flavors of herbal hops, citrus and toasted malt. The finish is mildly bitter with a citrusy hops aftertaste. Above average French IPA overall.
