Chef Paul Kahan's Publican Cider is a blend of a few distinct ciders, each of which is a blend of several Michigan heirloom apple varieties. One more tart, another more fruity, one left on it's lees for months. The resulting blend is a very complex cider, with notes of both English and French style ciders.

Bottle, shared with Inbreak and friends. Pours yellow with sediments, with no head. Aroma is funky notes of apples and bretty fruity notes, with hay, musty fruits and minerals. Light to medium body, with average carbonation. Flavour is tart fruity notes of apples, musty fruit peel and minerals.

Small slightly bubbly-creamy mediumlasting head, cloudy. Aroma is slightly dry sour-ish fruity, sour apples, brett, minerals, apple peel, barnyard, wash cloth, hints of sulfur. Taste is slightly dry sour-ish mineraly, weeds, apple cores, sour apples, minerals, grass, hay, paper, apple peel, barnyard, yeast, hay. Medium bitterness, slightly watery and dry sour-ish fruity mouthfeel. Fair enough, over the top I guess...

750ml bottle. Sparkling hazy pale yellow gold colour with a short-lived white foam head. Aroma of apple, funk, hay, oil, hint of sulphur. Taste is tangy apple, apple skin, tart, with some fruity citric, woody & barnyard notes, and drying tannins. Light bodied, spritzy carbonation, dry fruity sour tannic finish. Quite drinkable.

Bottle. Pours a clear bright yellow with a bubbly white head that dissipates completely and has visible carbonation. Aroma is extremely funky with an egg and musty leaf notes as well as an earthy apple backbone. Flavor has earthy apple with a slight dryness and a strong leafy funk.
