Cherry Adam from the Wood is aged with locally grown black cherries in oak casks for 15 months. The fruit lends a sweet tartness to the finish, melding with the wood and adding a new dimension of complexity. The 2008 bottling celebrates 15 years of business for me and was aged in Bourbon and Sherry barrels. The 2009 bottling was aged exclusively in Elijah Craig Bourbon barrels.

2014 bottle drunk 5/28/23. No carbonation indeed. Dark ruby-amber-mahogany. No head. Smells like a bit of caramel, vanilla, oak, cherry, light oxidation. Not a lot of oxidation is nice but it's a bit sweet and fudgey-cherry heavy. In the mouth this really comes out. I love the soft, tannin-rich texture and delicious, well-done cherry flavors but there's so very little acidity here and the oak and tannin doesnt seem to balance the sweetness. Too fatiguing over the course of the glass, even trying to let it warm for quite a while. Ended up dumping the second half of this $28 bottle out.

12 oz bottle dated 2022. Pours a dark brown color with a small ofrf white head that soon recedes to a fine ring. The aroma is big with cherries, wood and vanilla. The taste , like the aroma, features black cherries, some oak and a bit of vanilla. There is a bit of underlying piney bitterness. The palate is full and the carbonation is soft. Finishes long with cherries and a bit of acidity. Overall: Decent brewski. Paired well with some gouda and pretzels.
