Bourbon barrel-aged wheat-wine ale with cacao nibs and vanilla beans

A tasteful treatment of cacao nibs and hand-processed vanilla beans lace the golden waves of this wheatwine-style ale with a subtle savoriness reminiscent of white chocolate. Notes of coconut, honey, caramel, and vanilla intertwine seamlessly in this bourbon barrel-aged treat.

Old Notes: The primary component of our “White Oak” ale is a 100% barrel aged wheat wine that we affectionately refer to as “White Oak Sap.” Essentially a “summer” barley-wine style ale, but made with a wheat heavy grain base, White Oak Sap is aged in used bourbon barrels for nearly a year and comes out rich in flavors of coconut, honey, caramel and vanilla. To compliment the already rich flavors of the beer, we’ve added cacao nibs and vanilla beans to give this beer the delicate flavor of white chocolate…hence the name.

Bottle to snifter.
Appearance: copper color with a finger's worth of white foamy head which dissipated nicely to leave some light lace
Aroma: light coconut and honey in the front, then sweet wheat with some vanilla; caramel tones and some woody/barrel sweet whiffs, light chocolate further in the back
Flavor: blends all the prior noted aromas to a fine sweet quality encompassing a wide spectrum of various sweet tones; finishes with honey, some light tones of white chocolate and some caramel
Texture: medium bodied, good sipper; I see the normal "syrupy/sticky" notes of a normal wheatwine have been roughed up a bit to take away from that character - good job at The Bruery for doing that
Overall: I say a nice wheatwine I would welcome again

Dark golden with a white head - Malt and wood barrel aroma - Malt body with wood barrel oak flavours - The wood oak barrel flavours goes into the finish with some alcohol heat - This was good

I walked into a bottle share on my second trip to On-Tap. Can't tell the age on the bottle. Short pour into a 5oz glass. Murky, dull brown ale, almost flat. Most likely older bottle. Boozy, some smoke, soy sauce nose. Intense caramel candy & diffused bourbon, extra sugar, bittersweet, peanut oxidation, headache level sugar, pound cake. Just too much.

29 October 2021. Third Great Timternational Beer Geek Tasting. Cheers to the Ghent beer crew!

Vintage 2020. Clear amber, thin, off-white head. Aroma has lots of green apple (acetaldehyde), bourbon, vanilla, pear, wood, 'Twix' bar, caramel, apricot. Taste has sweet apricot, date & green apple in a caramelly, honey-like, generally low chocolate-like malt body, touch of vanilla cream, bit spicy. Peppery hoppy finish, apple & apricot candy notes lingering as well as quite boozy bourbon alcohol. Medium to full body, thin oily texture, average carbonation. Feels young, thin, and somewhat besides the point. Disappointing.

Clear orange beer, rather small creamy off-white head, little stable, non adhesive. Aroma: caramel, earthy, vanilla, malty, some acetaldehyde, slightly sweet impression, earthy and leathery notes. MF: lively carbon, medium body. Taste: bitter start, earthy touch, leathery, bit sourish, hoppy, some orange peel, little bitter. Aftertaste: rather dry, bitter touch, dried fruits, little oxidized, caramel, sourish, surprisingly light, easy drinkable, hint of vanilla, little oxidized.
