De Quadrum is een vol Belgisch Quadrupel bier van hoge gisting dat artisanaal gecreëerd werd in onze testbrouwerij, en dat we daarna in een lokale brouwerij (Brouwerij Contreras te Gavere) en samen met deze bevriende brouwer gebrouwen hebben.
Notitie: Omdat we van een aantal van onze klanten de opmerking kregen dat de Quadrum te sterk en te kruidig was, hebben we het recept licht aangepast voor de tweede batch. Het voornaamste verschil is dat we het alcohol gehalte laten hebben zakken van 9,6° tot 9,3°.

Bottle. Amber color. Vinous aroma with caramel and ginger. Citrus. Very sweet, malt, toffee, ginger, lemonpeel. Too sweet for me. Not bad, though.

Si cette Quadrum 10 reprend la ligne aromatique de sa grande sœur la Quadrum 12, autour des fruits confits, du miel, caramel finement épicée, elle en est très loin au niveau de l'intensité, de la présence en bouche et du caractère. On voit ici très largement l'intérêt d’un alcool poussé sur la Quadrum 12 pour soutenir les arômes (et en effet induit du sucre). En verre nous sommes similaires avec un ambré paré d’un léger voile (EBC de 20) et surmonté d’une très fine couche de mousse blanc cassé. Le nez se porte sur fruits confits, le miel et le caramel, avec un côté liquoreux moins développé que sur la 12 mais une amertume qui ressort légèrement plus. A la dégustation, ce qui frappe, c'est le manque de présence en bouche. L'attaque, timide, manquant d'intensité est sur les fruits confits, le miel et les épices. La deuxième et la troisième bouche, linéaires manquent également clairement de caractère et de présence. L'arrière bouche présente quant à elle une amertume légèrement plus présente (EBC de 46 sur un ressenti moindre). Le final sauve quelque peu l'ensemble avec une amertume qui prend les devants sur un alcool pourtant à 9.8 %, mais aux abonnés absents et avec les arômes prennent davantage de corps. Ne pas hésiter de choisir la 12 !

Clear medium amber colour, fair and thick frothy off-white head, good retention, heavy lacing. Aroma malts, apricot, peach, caramel, yeast. Taste medium sweet and bitter, malty, light fruity, bit toffee, light spicy notes. Dry bittersweet aftertaste, earthy and woody notes, quite peppery and bit astringent finish, medium body, creamy texture, soft carbonation, nice brew. [brewed on 13/6/2015]

33cl bottle from Hopduvel, Ghent.A brilliant golden amber pour woith a really thick cream head; mellow sour fruity aroma;; rich and buttery in the mouth, with a butterscotch taste; and lots of warmth from the alcohol; and a dry alcohol finish. Smooth and satisfying.

Bottle from De Hopduvel. Dark brown, beige foam. Nose of ripe fruit, taste is harsh bitter, grassy, not very well balanced.

Bottle @ weekly tasting shared by Joes. Clear dark orange - golden color, full sized quite thick off-white head. Aroma is malts, a bit herbal. Taste malts, a bit herbal, a bit sweetish, soft bitterness. Average body and carbonation. Meh.Earlier Rating: 10/20/2015 Total Score: 2.6Bottle @ home. Indeed the 9.6% ABV one, so has to be this entry. Nice amber reddish color, medium sized off-white head that leaves fair to good lacing. Smell and taste malts, some weird sweetness, herbs or spices, yeasty, a hint of candy or sugar. Meh, don’t like it.

Bottle @ benzai. Clear golden colour with a small to medium sized white head. Smells slightly sour, hay, fresh, grassy. Tastes grassy, meaty, herbs, weird. Medium body, soft carbo.
