The Calypso hop was a brand new import this year, it came with grand reviews and was recommended by a couple of US brewers I knew so we went for it. We kept the grist simple to let the hop shine, Pale, Carapils and a touch of wheat with 15kg of hops in a 5bbl brew. 5kg in the boil, 5kg at flame out and 5kg dry hop. Hops smelled great going in, lots of apples and pears, but didn’t really come through in the finished article. Mostly bitter (due to high Cohumulone content) with a touch of Sorachi esqueness, lesson learned.

Light haze on this gold beer, good off white head. Palate is smooth and semi dry. Hops are juicy with good bitterness. Repressed tropical fruits add colour.,Mango, pineapple and peach embedded in yellow grapefruit. Nice creamy malt backbone. Finishes smooth and semi dry with good bitter linger. Very quaffable. Like this hop, like this beer!

(Cask at Brew Wharf, Southwark, London, 21 April 2012) Golden amber colour with foamy, off-white head. Fruity, hoppy nose with notes of citrus, grapefruit and lemon peel. Fruity, hoppy taste with citrus, grapefruit, passion fruit, lemon peel and a generous citric bitterness in the finish. Medium body, with a certain sweetness. Excellent pale ale with a lovely hop character. Very nice.

Cask@Brew Wharf, London. Amber colour, small head. Aroma is caramel, floral, fruity and quite toffeeish notes. Flavour is fruity, herbal, caramelly and quite nicely bitter. Good and refreshing.

Cask at King William IV, London. Pours clear gold with a perfect-looking white foam head. Bready citrus character, with lasting grassy bitterness. Light bodied with fine carbonation. Good condition. Dirt, earth and grass in the finish, with some toast and citrus. Very nice beer.

Bottle at Planet Thanet Bf 2012. Hazy gold lasting white. Fresh hop aroma is amazing. Green leafy aroma. Some toast. Yes it has a touch of the sorachi to it. Creamy mouthfeel. Lovley lon lime leafy hop. Cream blue cheese
