A farmhouse ale with roselle hibiscus. The inspiration was to make a simple beer with a subtle adjunct.
To make Mr. Mingo, we brewed a simple saison with barley and wheat from Blacklands Malt and raw Texas Hill Country water from our onsite well. We added hibiscus flowers at the end of the boil and then later dry hopped with more. In total, we used around 1 pound of hibiscus per barrel.

Pint can, 8/25/23. Clear red-pink tinge-large tan head, good retention. Aroma of hibiscus, bready malt, caramel. Taste is hibiscus, pale malt, white bread, stone fruit. Crisp, well balanced.

From a pint can. Pour a clear copper with a pink tinged white head. Aromas are floral. Flavors are tart grape with lingering sourness.

Tip Tap draught, 6/14/23. Clear hibiscus, neat, well-retained, pink head. Bit of tart acid and mineral from culture mixing with very forward hibiscus. Earthiness follows with lingering tartness and fruit. Earthy, nutty hibiscus then progresses to a mix of juicy acids and dry, tart notes. Well-attenuated, yet malty body supports. Really interesting stuff at every point and it's hard to tell where the cultures end and hibiscus takes over. Incredibly crisp, refreshing, drinkable stuff. No compromise on flavor here for its low abv. Not a classic Belgian saison, but a mixed fermentation from JK and thus rating it accordingly.

Half pint @Thirsty Growler. Clear, magenta, frothy goblet pour. Hibiscus floral, rosehips, watermelon. Flavor is bittersweet, a little acrid, serious aspirin, watermelon pith, white bread finish. Simple & tasty.

Orange with a medium sized foamy head that left good lacing. Tart and grainy with earthiness and hibiscus Long finish. Medium body.

Can from Livonia Liquor. Pours a mostly clear pink with orange highlights and finger of off-white foam that dissipates. Lovely hibiscus focused nose with faint wild berry and mineral as it warms. Good carbonation, mineral notes with hibiscus, berry and light citrus. Crisp, clean and enjoyable.
