Spontaneously fermented using wild yeasts, followed by ageing in oak barrels. Oak and fruit on the initial aroma precede a flavour of sharp apples and berries. Tannin from the oak underscores the finish as more fruit characters are revealed.

Gravity cask at the 2016 Cambridge Beer Festival. Dark gold to golden brown. No head and very little visible carbonation. Lovely tannic aroma with notes of oak and overripe citrus. Taste is tart rather than full-on sour, with notes of tangerine and pink grapefruit. Gloriously long fruit-led finish. Back-of-the-throat sourness refuses to fade. Interesting stuff indeed.

20th March 2016
Bright clear gold beer, tidy pale cream colour head. Palate is light, fairly dry and has good fine carbonation. That Elgoods easy going natural feeling sourness with a nice tangerine - lemon - lumquat fruit. Spritzy seltzer. Light finish. Easy going and very drinkable.

Deaft. Hazy to cloudy yellow color, off tan head. Dusty and peppery atoma. Taste is softly sour lemon, tart and dry finish.

Keg at spitfire. Pours golden orange, nose is funky, toffee, vanilla, taste is sour, fruity, dry finish.

Keg at Ushers. Pours clear pale gold with no head. Aromas of light acetic, light sherbet. Taste is sour, tart fruit, pears, more sherbet on the finish. A little thin maybe.

Draft @ Brett Fest 2015. golden pour. Aroma of vanilla and tart. Taste has horseblanket vanilla, old wheat and sour. Different and nice.

Thanks for sharing! Sampled cask @ In De Wildeman during Carnivale Brettanomyces #4. Hazy orange with no head. Nose is apple, brett, quite sweet with caramel & quite UK in character,… Taste is apple, brett, urinal cake, sugar, watery with caramel, horseblanket,… Flat,… Odd, a bit too sweet,… Base seems to be UK & it feels like it didn’t ferment long enough for a lambiek. Unlike any other lambiek that I have ever tried before. Interesting to try but not particularly superb. Def. interesting for sure.

Cask at In De Wildeman. Pours almost clear amber with no head. Aroma of Brett funk, apple, tart fruits, light wood and a little rubber. Flavour is light to moderate sweet and sour. Light to medium bodied with flat carbonation.
