A collaboration with our friends at Jester King, or if you are in Texas, it is absolutely not a collaboration with those cats!

Our Jester King collabo magnum opus to Texas citrus. Well, all Texas fruit, really.

In every group of citrus, there is bound to be a natural born commander. It’s inevitable, really. You can’t stop it. Don’t even try.

We tried to gather all the citrus in Texas, we really did, but it’s a big state, and “they” were already using most of the citrus anyway, apparently. Who knew?

What we were able to forage, we (well, the kind folks at Jester King, actually, but we were there in spirit) dehydrated for easy transport and use.

We found:
Satsumas, Tangerines, Sour Oranges, Lemons, and Grapefruit

Add to that a solid backbone of Michigan chestnuts, and look for a nutty, caramelly, citrus delight.

Best enjoyed on a cool fall evening. Or just about anytime else.

Bottle. Clear chestnut amber with a dense off white head. Funky aroma with lemon and grapefruit, honey. Sour with a little bit other than citrus going on - some dark sugars and doughy bread, hints of woody herbs and nuts. Boot polish, red wine vinegar. Drifts away at the end. Lots of charm and intrigue. Better as it warmed above 12C. This 1/18 bottle is in excellent shape and I'm inclined to buy more.

On tap at Jolly Pumpkin - Detroit, pours a cloudy murky yellow with a small white head. Aroma brings out tons of citrus zest, wild yeast, and saison yeast. Flavour is loaded with bitter citrus zest, wild yeast, and bitter hops. Extreme citrus zest bitterness finishes this off. Very good.

Sampled from the tap at the Detroit location. Pours a clear amber with a white head that dissipates slowly to the edges and laces. Aroma has light citrus and a slight nuttiness with a growing oaky backbone. Flavor combines tart citrus and chestnut with a bit of oak and grain backing.

Tap@SKAAL, Copenhagen (23/01/2020) - hazy amber orange with a white head. Tart fruity with notes of citrus fruit, some lemon and orange notes, grapefruit, light to medium busy, tart lingering fruity close.

Draught in Draught Industries: pours light brown with beige head. Aroma is vinegar, wood, roasted malts. Sourness is pretty light. Woody sourness is moderate. Solid ale.

Draught @ City Hops (5/17/19) Faintly cloudy reddish brown with large foamy tan head, acidic caramel aroma, high carbonation, medium bitter caramel taste on acidic foundation, woodsy flavor, thin body, long bitter finish. Chestnut flavor is barely there.

750 ml bottle into tulip glass, bottled on 1/26/2018. Pours lightly hazy deep orange/copper/amber color with a 1-2 finger dense and rocky cream colored head with fantastic retention, that reduces to a nice cap that lasts. Thick foamy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big sour/tart/tangy red grapefruit, tangerine, mandarin orange, lemon, lime, citrus peel/rind, peach, pear, pineapple, passion fruit, mango, melon, apricot, red/green apple, white grape/wine, peppercorn, toasted oak, hay, straw, herbal, floral, grass, chestnuts, caramel, brown sugar, and toasted biscuit; with lighter notes of roast, oaken vanilla, leathery/musty/lacto funk, white wine vinegar, and yeast/oak/toasted earthiness. Damn nice aromas with great balance and complexity of citrus fruits/peels, fruity/funky/acidic/spicy yeast, oak barrels, chestnuts, and dark/bready malt notes; with great strength. Taste of big sour/tart/tangy red grapefruit, tangerine, mandarin orange, lemon, lime, citrus peel/rind, peach, pear, pineapple, passion fruit, mango, melon, apricot, red/green apple, white grape/wine, peppercorn, toasted oak, hay, straw, herbal, floral, grass, chestnuts, caramel, brown sugar, and toasted biscuit; with lighter notes of roast, oaken vanilla, leathery/musty/lacto funk, white wine vinegar, and yeast/oak/toasted earthiness. Light-moderate fruity/lactic tartness, citrus tang; herbal, floral, grassy, citrus peel/rind bitterness; and yeast/oak tannin spiciness on the finish. Lingering notes of sour/tart/tangy citrus, citrus peel/rind, peach, pear, pineapple, passion fruit, mango, melon, apricot, red/green apple, white grape/wine, peppercorn, toasted oak, hay, straw, herbal, floral, grass, chestnuts, caramel, brown sugar, toasted biscuit, roast, oaken vanilla, leathery/musty/lacto funk, white wine vinegar, and yeast/oak/toasted earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of citrus fruits/peels, fruity/funky/acidic/spicy yeast, oak barrels, chestnuts, and dark/bready malt flavors; with an awesome malt, bitter, tart, tangy, spiciness balance; with no puckering/astringent flavors after the finish. Light-moderate increasing dryness from lingering bitter/spiciness, tart/tangy fruit, and carbonation. Medium-plus carbonation and medium body; with a very smooth and moderately bready/grainy/acidic/tangy/tannic, and fairly crisp balanced mouthfeel that is great. Minimal warming alcohol for 7.7%. Overall this is an awesome fruited sour/wild saison. All around awesome complexity, robustness, and balance of citrus fruits/peels, fruity/funky/acidic/spicy yeast, oak barrels, chestnuts, and dark/bready malt flavors; very smooth and easy to drink for the ABV, with the modestly bitter/spicy/acidic/drying finish; not overly lactic. Awesome balance between classic JP house Brett/Bacteria/Saison yeast complexity, citrus/earthy hops, and citrus fruits; with a great chestnut and bready malt backbone. Mild residual sweetness with lingering crisp dryness. A really enjoyable offering, and outstanding style example as expected.

Nutty dark sour. Cloudy copper with a small white head. Nutty and earthy with dark malts.
