A Fluff full tan head with a soft coffee nose. Nice dense body and creamy mouth feel. Coffee first in the taste profile with a rising bitterness as the beer settles in the mouth. A touch of semi sweet chocolate and some dark berries come out later in the taste. There are more hops underscoring traditional stout tastes than one would normally expect. Very drinkable.

Jet black pour, small mocha head.
Great sweet roasted almost burnt malt aroma, with some nice coffee, and cocoa notes. Soft carb, very full mouthfeel, super nice on the palate. The finish is high on the bitterness, and the sweetness is very welcome and compliments great. Solid cocoa, espresso notes in the finish, with a touch of brown sugar. Great stout.

Taster at the brewpub. Lightly cloudy, dark red to black colored. AROMA- coffee, roasted, plums, black cherries. FLAVOR- neutral to dry, moderately bitter, roasted, coffee, earthy, slight touch of fruit. Medium bodied. Very good.

Keg at Brasseur du Temps, Gatineau. Perfectly black with beige head. Rich aroma of burnt coffee. Mid sweet with medium body and well rounded mouthfeel. Coffee, fudge, licorice and ash. Long bitter finish. Packed with flavours, yet mellow and drinkable.

Draught @ the brewpub (5 o’clock). Pours hazy dark brown with shades of ruby and small light tan head. Clear aroma of malt and roast, with some estery notes and fruity touches. Bitter, roasty flavour with hoppy notes and touches of malt and coffee. Fruity hints. Bitter, roasty finish. Okay.

La Nuit des Temps is their 5% standard stout that is a dark cola brown with ruby highlights. The nose is a simple soft cocoa. The taste is more complex giving you smooth cocoa, some roastiness and some light hoppiness. A solid stout.

Light vanilla and coffee aromas in here. Pours black with good head and lacing. Finishes nutty bitter with good staying power. Average carbonation. Tap at brewpub.

En fût au BDT. Couleur acajou foncée, mousse beige. Arôme de café, malt torréfié. Goût de café, malt torréfié, légère amertume. Carbonation moyenne, corps moyen.

De couleur noire et opaque. Nez de malt rôti, moyen de café et de chocolat noir avec des notes de pain grillé, de houblon herbeux et quelques traces de fruits (cerises noires). Moyennement ronde en bouche avec un pétillement moyen ainsi qu’une texture moyennement crémeuse. Faibles notes fruitées (cerises noires) lors de l’entrée en bouche rapidement suivi d’un goût de chocolat noir, de malt rôti avec des notes de pain grillé puis en finale l’on retrouve un moyen goût de café et une légère amertume de houblon herbeux. Post-goût moyen et aux notes sèches, légèrement amer de rôti avec des notes de café, de houblon herbeux et de chocolat noir. (9 janvier 2013)

Enjoyed at the pub itself. Poured a dark brown colour with a beige head that gave out dirty lace. Aromas of coffee and dark fruits (prune mostly). Hints of anise eventually come out. Roasted malt taste with raisins, alcohol. The hop is mild, but found all the way giving a very nice light bitterness. Yeast balances everything. A bit light on the mouthfeel, but easy to go down. Found the yeast to be a little too much over the roasted malt, but decent dark fruits all-around.
