(750ml 2015 bottle from Mikkeller Webshop) Pours nearly clear medium orange with a fine white head that lasts well and leaves some lace. Aroma is quite floral and leafy, elderflower, fresh grass, cheesy funk (parmesan), perfume, woody, attic, light fresh bread, white pepper, just a hint of the ‘dill pickle’ character. Flavour is very lemony, fairly sour though not bracingly acidic, a bit yoghurty, ample elderflower and general floral, leafy notes, musty wood, lightly funky, slight breadiness to the malt with a hint of sweetness towards the finish, with persistent lemon, unripe apple, a hint of cider vinegar, elderflower, slightly drying wood. Medium bodied, low effervescent carbonation. Quite a nice nose, not quite as developed on the palate compared to Mamouche for example.

Sergey’s birthday party; corked bottle, bottled Sept 2015, batch BI00OBG, bb 2021
Cloudy orange color. The elderflower dominates aroma and flavor; in the aroma there is a good presence of Lambic as well, cobwebs. The mouthfeel is soft, sour with grace, juicy, with some lemon juice, some cobwebs.
Very interesting.

750ml bottle (thx, Farees!) at Alex’s in honor of my birthday and CPA PREP finish. Bottled on September 2015. Pours a hazy golden with a white head. Aroma is crazy intense with elderflower notes, some berries and flowers. Taste is very sour with elderflower notes. Too sour for me.

750ml bottle split with the Beast, 3rd March 17. Pours clean, clear, light in colour, soft small bubbles. Aroma is funk, elderflower, slight cellar. Taste is complex, tart, then floral elderflower, sour, dank, more so as it warms, more barnyard. Refreshing and enjoyable.

750mL bottled 2016, drunk at Akkurat with Nelson on 11/30/16.
Light blonde body with some brass hues, good clarity and ample carbonation, with a small, off-white head atop.
The nose is bright and vibrant without any soapiness that sometimes plagues these spice/herb concoctions. Like the SpontanBasil, I actually like this much more than expected, though when I think about Mamouche, this doesn’t really compare. Not that there’s anything wrong with this, rather it’s just a lot more straightforward, with light apple, honey, nuttiness and very light Brett funk. None of the wacky, musty, mineral-heavy funk of Mamouche. Still, it’s enjoyably aromatic and provides enough lambic character to keep your interest.
In the mouth, it’s lightly malty, with honey and light whitebread providing a strong enough balance to the moderate tartness and lively herbal qualities. Black pepper, violets, honeysuckle and poignant acidity all complement the sour acids. Tight carbonation with no flaw or alcohol and pleasant, if rather simple tart acids on the finish. Seems like it should develop nicely and hopefully funkify over the next 5 or more years.
