By using wheat, oats, and rye, besides barley malt, we tried to thicken up the body of this light, dry saison late and dry hopped with Saaz and East Kent Golding hops.

Bottle. A lightly hazy one, pale golden in color and with a dense, finger-thick off-white head. Honey on the nose, with citrus fruit notes, grass, spiced notes and grainy pale malts. The flavor has a decent bitterness, with some honey. Pale malts, grass, hay hints, citrus notes and some yeasty spicyness. Dry, medium body with a pleasant carbonation level. Lasting dry and fruity finish. Not bad this one, but a bit too honey-ish and malty for me. 150124

Keg at the Earl of Essex - London. Pours hazy yellow-gold with a thick, creamy white head. Prominent saison yeast in the aroma, with secondary notes of dough and candied lemon peel. Light to medium sweet flavor with a bit of lemon rind, citrus pith, yeast, simple doughy white bread, hayz. Light bodied with lively carbonation. Basic sugary dough and cereal to end, with mild bitter hay, some lemon peel, hay. Pretty simplistic but drinkable enough.

Keg at Mother Kelly’s, 31/10/14. Pale golden with a moderate off white head. Nose is citric tinged straw, farmy, light yeast, straw, lemon peel. Taste comprises much the same, faint tropical infusion, touch of funky farmyard, lemon rind. Medium bodied, fine carbonation, semi drying close. Decent enough saison, clean, simple, no frills but delivers the refreshing edge I crave from the style.

(Draught at In De Wildeman, Amsterdam, 20 Aug 2014) Golden colour with frothy, white head. Fruity, malty nose with citrus, grass, peaches, bread and hints of herbs (sage?). Malty, hoppy taste with notes of bread, grass, citrus and a certain floral bitterness in a dry finish. Light body, quite dry. Fresh and tasty, but a bit thin. Quite nice.
