Our first Winter Ale is a Trappist style beer brewed using traditional live yeast, rye and a seasonal twist of dates and orange zest. Dark with rich malts, caramelised sugars, warm stone fruits and a gentle spice to warm those cold winter days.

Bottle sample @ English evening tasting at Malt Attacks, Brussels. 75cl, BB 30/04/2015, batch01. Couleur acajou, brune, col blanc-cassé. Arôme fruité noir de date, petit rétro épicé rappelant la réglisse. Palais est malté, caramel avec une pinte épicé rappelant les épices hivernales, all-spices, nutmeg et réglisse. Pointe de chocolat avec un palais assez épais de grains - seigle. Note peu le profil abbaye. Fini sec, et fruité noir.

5 Kay, 7.5 Kay, 10 Kay Tasting. Thanks to Paul and to Leighton for recapping after I forgot to drink it! Hazy amber beer, few pale cream colour bubbles. Smooth malts bring a little unsweet caramel. Mild rye spice. Little ripe orange. Smooth dry finish. Wants something else to being it alive.

Bottle at the 5/7.5/10 K tasting, 30/12/14. Hazed golden amber with moderate light beige bubbles up top. Nose carries sweet notes, spice, dark fruit rinds, pear juice, musty wood. Taste comprises spice, dark fruits, brown sugar, toffee, woody notes, fruit loaf. Medium bodied, fine carbonation, semi drying close with light bitterings. Ok stuff.

Bottle shared at Craft Clerko. It pours hazy deep mahoganny brown with a thick light beige head. The nose is toasted pine, juicy, varnish, dried fruits, toffee, leather and light spice. The tast is bitter-sweet, honey, earth, candied orange peel, festive spice mix, touch of booze and toasted grain. Medium+ body and fine carboantion. It didn’t wow me, but it was pretty decent anyhow.

Bottle shared at CBC Clerkenwell - thanks to Paul. Pours clear, vibrant gold with a frothy off-white head. The nose has some winter spices, toasted bread, grain, toffee. Medium sweet flavor with light herbs and winter spices, dry toast, dried berries. Medium bodied with average carbonation. Finishes with further dried herbs and spices, vague cinnamon, all spice, grainy toast. Not bad.
