Voici un Imperial Stout comme je les aime : arômes francs et intenses s'exprimant autour d'une belle structure. Elle aurait été exceptionnelle avec davantage de variations est une arrière bouche plus ample. Mais ne boudons pas notre plaisir. En verre, c'est un noir total (EBC à 120) avec une quasi absence de mousse. Le nez est intense sur le café accompagné de fumé et de chocolat. la dégustation débute pas une attaque d'un excellent équilibre malt/houblon, avec une amertume bien présente accompagnée de chocolat et de café. La deuxième, quasi linéaire monte sur l'amertume et sur le café? Une petite présence épicée se fait également ressentir. L'arrière bouche, plaisante, aurait mérité d'être davantage d'ampleur. En terme gustatif, celle-ci reprend fortement la seconde bouche. A partir de la troisième bouche on monte nettement en intensité vers un final très long et ample, avec des notes de café de toute splendeur auxquelles viennent s'ajouter des arômes fumés et un alcool se faisant légèrement ressentir. Ce dernier à 11% est particulièrement bien intégré sans que le sucre soit surdosé (à noter qu'il n'y a pas d'ajout de sucre). L'alcool structure d'ailleurs remarquablement l'ensemble. L'amertume avec un IBU à 60, complète à merveille notre trio en conférant fraîcheur et puissance. Imperial.

On tap at the excellent Caulier 28 bar, Brussels Central station, Belgium. A black coloured pour with a thin beige head on top. Boozy, chocolate, coffee aroma. Tastes boozy and rich, chocolate, coffee and some caramel, slightly sweet. Very nice imperial stout.

At the Caulier 28 bar Brussels Central station. Black beer lasting tan head. roast toast chocolate aroma. Good in mouth. Love the chocolate aroma. Hides abv well with just a hint of boozyness and heat on finish. Not perfect. Too hot on end. But i do like the dark chocolate flavours.

Bottle of 12%. Pours jet black with a small, foamy, beige head that lasts. The aroma is complex, with roasted malt, licorice, coffee, dark chocolate, pepper and chili, wood, smoke (I’d even say tobacco) and smoked meat. It tastes very light sweet, light to medium bitter, hints of sour and umami. The finish has burning alcohol but especially pepper, a bit too harsh for my liking. Oily/thick texture, fizzy carbonation. It’s almost like smoking a cigar - approach with care and take your time.

Draft @ Brasserie Caulier, Brussels. Black colour, brown foam. Sweet, chocolate, caramel, smoke, roasted malts, coffee. Peppery and light burning chili aftertaste. Not bad.

Bottle at Brew Beers and Ciders, Sukhumvit, Bangkok. Poured a clear dark brown with a frothy light tan head. The aroma is sweet roasty malt, light caramel toffee. The flavour is moderate sweet with a rich, smooth, oily, sweet malt, red berry fruits, alcohol bitter palate. Medium to full bodied with soft carbonation.

F: average size, not very long lasting, brown. C: dark, opaque. A: coffee, cocoa, spicy, roasted malt, dark fruits, caramel, honey, whisky. T: unexpected small gusher, roasted malt, cocoa, coffee, chocolate, dried figs, warming alcohol, long lasting chili spicy feeling in the mouth, hint of woody, hint of honey, perfectly balanced, medium body, medium carbonation, great IS with chili & coffee, I like it especial in these cold days, BB: 11/07/18, alcohol 12° version, degree plato: 22, EBC 120, IBU 60, 33cl bottle from Delhaize Chazal @ Schaerbeek in Brussels.
