How many different ones? Bottle. No idea where from. Another cellar thinner. Completely clear light ruby red. Slim glossy lasting white foam. Loads of raspberry. Jelly. Jam. Compote. Some vanilla. Bit of oak. Maybe I don’t know my way round a De Cam beer (I’ve had very few), but this doesn’t feel like lambic. More of a fruited sour. Lacks any depth or complexity. Which doesn’t mean to say it’s not enjoyable, because it is. In fact it’s nicely juicy and very easy drinking. But it’s all raspberry and some vanilla and very little else.

Tart and sour, dry, fruity. Raspberry, hint of citrus, woody funk. Low acidity, smooth, very nice.

Snally: pours orangish red with pinkish head. Loads of raspberry in the nose with spritzy funk. Lightly sour, interesting finish. Rather acidic.

375mL bottle, 2022 on the cage, drunk 9/24/24. Clear muted raspberry. Quickly-fizzling head. Very lovely, juicy, rich raspberry. Good balance of acidity and juiciness. Lots of brett and gentle lactic acid behind it. Moderate funk. Rich, rich, juicy, bright, acidic raspberry with hints of acetic, light brett and moderate-to-strong lactic culture. Gentle oak, with a soft, wheat and oak structured body. Lingering acidity is strong. Malic acidity is very high, with hints of acetic and strong lactic, as well. The texture is lovely and it shows a clear lambic character, but probably needs a few more years to soften the raspberry. Very similar to Rose de Gambrinus.

2017 iteration, 750 ml bottle. Pours light hazed red/pink with a beige foam with link tinges. Incredibly sharp, moderate funk, deep raspberry, also some cherry, earthy, balsamic hints, oaky, a little of that almondy cherry pit vibe going on, super dry on the palate. Medium body with spritzy carbonation. Too sharp & acidic, some like that way, but it's not for me.

Bottled. Ambery red colour with a small white head. Aroma is raspberries, wood and some mild vanilla tones. Flavour is raspberries, some oaky, mild tart tones with a slight acidity. Nicely dry palate.

375ml bottle from Sophie's Beer Store. Cracked as the first beer on Christmas Afternoon whilst cooking a Salmon Wellington. Hazed pink complexion, good off-white head. Sharp, marvellously fruity, flavoursome with lovely wild lambic elements, great wild aroma. Excellent framboise.
