For years whenever people asked what our favorite beer was we'd say High Life. (And not only because they'd send over cases of High Life when we said it.) A couple years ago we approached Lisa Zimmer at Miller about brewing a collaboration together. Big meets small. Technical acumen and resource meets magic and wishful thinking. Because at the end of the day, we're all brewers. Beer is beer and it's high time the trope of us vs them is replaced with an understanding of how big and varied the world is. There are more things in the heavens and earth, Horatio, than dreamt of in your philosophy.
Turning such a big ship takes time but Lisa was relentless and John was stubborn and cases of High Life kept showing up at the brewery. Finally, in June we went up to Miller in Milwaukee to learn the secrets of the Lady in the Moon, brewed a ludicrously small ten barrel batch of High Life on their pilot system and drank a bunch of High Life. Needless to say, we were giddy. Shortly thereafter, Miller's R&D brewers came down and we brewed Eeek! here in Chicago...and drank a bunch of High Life before drinking even more High Life at Sportsman's Club.
As High Life is a pinnacle of technical brewing expertise, we went rustic AF for Eeek!, blending all of our wild acidic and funky mixed cultures together with house lactobacillus and set them loose on base High Life (like) wort. After a month of unregulated primary fermentation, we turned on the jackets and lagered Eeek! for an additional three weeks before bottling conditioning with Champagne yeast. Because, obviously.
Aroma is bright tangerine, mild hay, lemon pepper, wild blueberries and pineapple funk. Delicate and perfectly light in body with a groundswell of yuzu-like acidity spiking to a delectable finish of wildflowers and nectar.

Bottle at GTOM, pours a hazy yellow gold with medium white head that lasts. The aroma is strong yeast, floral, funk, oak. Medium body, yeast, lemon zest, oak, light acidity, very good.

Bottle. Pours hazy yellow, small fizzy white head, decent lacing. Aroma is grains, bugs and lemon. Medium tart, light funk. OK.

On tap at Off Color Mousetrap Chicago. Hazy gold colour lasting white head. Kettle sour lemon yoghurt aroma. Very drinkable. Good lemon curd. That's pretty good. Mix of lager drinkability and sour lemon finish. Delicious.

A hazed blonde Weisse with a thin white head. In aroma, sweet fruity malt with light grassy hops, light Epsom salts, light Brett, very nice and smooth. In mouth, a nice sweet fruity malt with light lemon notes, lactic acid, Epsom salts, very nice. On tap at brewery.

Bottle - pours yellow white head - nose and taste of citrus, sourdough bread, lemon, funk - medium bodied. Not bad at all.

750ml bottle thanks to Steve. Interesting concept, but its still lipstick on a pig. Dolling up High Life with champagne yeast. Yields an average sour, somewhat recalling a Belgian wit. Pale golden pour, wispy head, mild tartness.

750ml bottle thanks to Steve. Pours out golden topped with a white head. Nose is nice light citrus sour notes some light grain and a touch of fruit. Taste is more of the nice light sour tartness and a good little fruit touch.

Bottle pour: pours hazy pale with a white head. Aroma is dank funkiness and light fruitiness. Taste is sour and juicy.can’t see much miller high life in that. Still it had nice complexity and was quite good.

Bottle shared by Adam, thanks! Pours a near clear very pale yellow with a white head that dissipates completely. Aroma has an interesting combination of corn, champaign yeast and light sour fruits. Flavor has more light sour fruits (apple) with champagne yeast and a bit of corn backing.
