Vous voulez de la complexité, en voilà! Mes papilles vont du miel au cognac, en passant par l'amertume et le sucré, le tout sur une finale bien longue et très appréciée. C'est délicieux!

Tasting at Matt's
Cloudy golden colour. Very nice aroma, strong and harmonious at the same time, funky yeast, touch of citrus peel. Highly carbonated, lean mouthfeel, moderately sour, with elegant white wine notes and light funk.
Excellent.

Bottle - Light creamy almost pineapple notes. Cloudy gold with a decent white head. Pineapple, dried white fruit, light tartness and a touch of funk.

Hazy, and light tan. Lots of brett on the nose, with nice fruitiness. On the palate, it's lively, woody, with a nice apple and berry, with a mellow pale malt note. Clean, nice funk accent, good barrelling. Nice depth and complexity for a beer that sort of sounds like a mutt. An inspired mutt.

750ml bottle (thx, Felix L.!) at Matt's. Pours a hazy golden with a white head. Aroma is very juicy, lots of floral and barrel notes as well as some apples. Taste is similar. Very nice.

750mL bottle, pours a cloudy golden with a small white head. Aroma is quite complex, with lots of oak barrels, plenty of brett, touch of wine tannins, and some stone fruits. Flavour is very complex and deep, with lots of brett yeast, barnyard funk, lots of oak, and some stone fruits. Loads of depth and complexity here. Lovely.

Les levures sauvages et les pommes nous introduisent à un olfactif plutôt champêtre où les notes de foin et de vieille grange dominent avec un soupçon de boisé et de cognac. Une mousse crémeuse, épaisse et persistante couronne ce liquide doré, légèrement voilé et doté d’une effervescence aux bulles très actives. Les pommes sont effectivement très en évidence en entrée de bouche, se mêlant de façon équilibrée à la rusticité des levures. On peut y percevoir de façon très subtile des notes tropicales, un léger boisé agrémenté d’une touche de cognac, des notes vineuses assez évidentes et une dominance de pommes acidulées. C’est plutôt rafraichissant, assez complexe, mais je ne sais jusqu’à quel point l’ajout de jus de pomme n’a pas noyé l’émergence des éléments IPA.

Bouteille 750ml au Bières et Saveurs 2018. Couleur jaune-orangée dorée voilée, mousse blanche. Arôme de pomme, Brett, floral, malt, miel, pointe d'alcool. Goût de pomme, sauvage, boisé, amertume moyenne, acidité moyenne. Carbonatation moyenne-élevée, corps moyen.

A hazed yellow gold saison with a thin white head. In aroma, beautiful sweet fruity mix of tropical fruits, Brett, light lactic notes, light Epsom salts, very nice and complex. In mouth, a nice tart mix of lemon pulp, light tropical fruits, light Brett, light lactic notes, very nice and complex. Bottle at Bières et Saveurs 2018.
