The apricots are sourced from environmentally-friendly and sustainable agriculture. The proportion is 300 g of fruit blended with one litre of lambic, and the soaking time is very short. Specifically, it will only take around five weeks for the lambic to extract the fragrances and flavours of the fruit. It is worthwhile to note that Fou’Foune kicks off the bottling season around the end of August. Given its success, Fou’Foune has taken up third place among the fruit beers in terms of volume, behind the traditional kriek and Rosé de Gambrinus.

Pour at Dark Fields of Winter. Pours hazy yellow with white head. Aroma has some horse blanket, citrus, and stone fruit. Flavour is sour with a lot of barnyard, grapefruit, and hay. Fantastic beer.

28.01.2024: 0,75l bottle at home. Vintage 2023. yellow cloudy color, small white head. smells stone fruits, apricots, earthy. Lovely smell. Medium body, soft carbonation. tastes stone fruits, apricots, earthy, light tea notes. finishes dry and light to medium sour with notes of apricots, stone fruits and earthy notes. Very nice one, lovely

August 2023. yellow cloudy color, small white head. smells strong apricots, bit grassy, earthy, very nice smell. full body, soft carbonation. tastes apricots, citric, grassy, earthy, bit jammy, rather clean. finishes dry and light to medium sour with notes of apricots, apricot jam and citrus notes. very good one, not super complex, could use a tad more funk, but overall rather jammy, getting more sour already, but still rather good to drink.
