The apricots are sourced from environmentally-friendly and sustainable agriculture. The proportion is 300 g of fruit blended with one litre of lambic, and the soaking time is very short. Specifically, it will only take around five weeks for the lambic to extract the fragrances and flavours of the fruit. It is worthwhile to note that Fou’Foune kicks off the bottling season around the end of August. Given its success, Fou’Foune has taken up third place among the fruit beers in terms of volume, behind the traditional kriek and Rosé de Gambrinus.

0,75l bottle at home. yellow cloudy color, small white head. smells of apricots, apricot pits, stone fruits, parfumy, lovely smell. medium body, light carbonation. tastes of apricots, stone fruit, some minerals, lactic, peppery. finishes dry and light to medium sour with notes of apricots, apricot pits and some lactic notes. bit on the lactic and dry side. Overall good, not as juicy as fresh.

Orange amber colour, hazy, no head at all. Aroma is apple juice, balsamico, apricot jam. Medium sour. Fantastic. Tap in Techie's.

Bottle courtesy of Diego shared at the Ryan’s tasting. Achie machie!!!!! Big barnyard and horse blanket nose. This is one sour/bitter beer. Super dry and crisp, it was so sour I could barley pick out any flavors, I guess apricot?
Update: ’05 vintage was suffering from autolysis and had a huge burnt rubber nose..

Draught at Gourmet Haus Staudt in Redwood City as part of their Lambic Day during SF Beer Week - so nice to have the return of SF Beer Week. This is such a great, subtle Lambic. Pours minimally hazed and yellow with white cap. Slight citrus married with a bit of funk. Faint barnyard works so well. This was a delicate, beautiful beer and I am so happy I finally got to try it!
