Clear brown, reddish, with a dissipating, yet lasting, thin, beige head; little lacing. Aroma of plum, pear syrup, caramel, red apple, red jam, cookie dough, raisin, 'carré confiture'. Taste is medium to heavy malty sweet, caramelly yet fruity in jam & raisin too, in that way somewhat sour; light to medium herbal bitter, tea-like with faint spicy licorice, already warming up. Dryish, herbal hoppy finish, lingering caramel, warming coffee liqueur alcohol. Medium body, oily/syrupy texture, lively carbonation. Good stuff, smooth, some ageing would make it even better.

Thank you! Sampled large bottle @ Modeste 2018. Dark brown, creamy mocha head. Nose is sweet sugar, thin, jam, quite BE but basic BE, bit too thin, caramel,… Bit too fizzy, should be richer given the ABV, figs, sugar, candy, low soap, thin soap, not that of an impressive BE but does the trick. Okay but not great, def expected more given the reputation.

Surprised to see I've never gotten around to rating this classic. And don't get me wrong--I appreciate Three Philosophers, even if I've never been quite as smitten with its enigmatic complexities as the more hardcore proponents of Belgian-style beers. Sweetness still becomes a sticking factor--kinda dumb, I know, when judging quads--but the candi sugar indulgence adds a heaviness that dulls the acidic boost from the cherries. Still, the blend of molasses, cocoa, dark fruits, yeast, and slightest of hoppy bite fights off any cloy notes, and the vinous finish keeps me coming back. Pours a hazy red-brown with a permanent beige head and moderate lacing. Nose is yeast and cherries and...balsa wood, maybe? Perky texture's good for a wannabe Belgian. Good beer.

Bottle. Pours unclear brownish amber. Aroma is marzipan, Belgian candy, sugar icing. Body is heavy and strong, lots of dark ripe fruit, also candy and marzipan, with a low carbonation. Full-ish and boozy, yet not overpowered. Not as complex as it could be, though. Good!

Bottle. Ruby color with tan head. Aroma is raisins, a touch cherries, chocolate, malty, brown sugar. Taste is the same. Silky mouthfeel with high but soft carbonation. Solid Quadrupel with a touch wildness!

From May 2006

Poured from caged and corked 750ml(2005-room temp) a deep amber with a huge head of foam that dissipates slowly leaving a fine layer with nice lacing.

The smell is a wonderfully sweet malt and cherry that explodes out of the bottle upon opening and continues from my New Belgium goblet.

The taste is a mix of caramel sweetness and cherry tartness, an unusual combination for my taste buds but the more I sip, the more I realize that this brew is quite enjoyable and the near 10%abv? I don't find it in the taste at all and after swallowing, there's just a slight warming. Good stuff!

Bottom line: This is a fine brew that I *know* I'll be trying again. I recommend it.

Edit, Nov 2 1010: My first bottle since my review, a 12ozer. As deliciously cherry tarty and with the same caramel sweetness as the 750ML bottles. It lost nothing going down from the large format bottle at all. A real treat to drink!

Bottled 355ml. -from Beergium. Clear amber coloured, medium sized off-white head, brown sugar in the nose. Sweet malty, dried fruits, brown sugar, discreet touch of cherries and noticable alcohol with touch of dates. The finish is rather sweet. Nothing more nothing less than ok, expected much better one.

2015 bottle via Rakuten. In color it is a deep brown with a beige head that dissipated super fast but it also has some pretty ruby highlights. The aroma is candied plums and stone fruits with a hint of berries. Full bodied which I like but sharply carbonated which I don’t as I prefer a smoother mouthfeel. That being said it is very common for the style.
The taste is rich malty sweet caramel with big berry and stone fruit notes plus some sharp booziness. Paired with the Caramel Tokyo Banana the beer really shines with the caramel becoming a chocolatey toffee like flavor and the beer’s sharp edges getting softened. Really good but I’d say you really should pair it with food for maximum enjoyment.
