The third iteration of the first barrel aged beer we ever made, this wild ale was aged with multiple strains of Brettanomyces and bacteria for a year in French oak, with Niagara Shiro plums thrown into the mix. We love how this beer has developed over time, and couldn’t be more proud to share the newest version, tweaked to include light acidity and a lower, more drinkable ABV. This 2016 version is all about clean brett aromatics, juicy stone fruit flavours, and a subtle but decidedly spicy oak character. The body is dry and lightly acidic, with notes of under ripe pear, apricot, and plum.

A beautiful golden sour ale with a thin white head. In aroma, Gueuze like quality, horse blanket, Epsom salts, light Brett, light lactic notes, light green pepper, very nice and complex. In mouth, a beautiful tart and complex Gueuze like offering, tart apples, light Brett, light lactic notes, ground cherries, nice and complex. Bottle at Brother’s Beer Bistro.

500ml bottle (thx, Nick M.!). Vintage 2017. ABV 7.9%. Pours a hazy golden with a white head. Aroma is funky (even slightly, farty), fruity, crispy. Taste is sour, fermented veggies, some barrel notes, slightly ascorbic. Quite tasty stuff.

500mL bottle, pours a cloudy orange with a small white head. Aroma brings out lots of plum-centric fruitiness upfront, followed by subdued oak barrels and a hint of brett. Flavour is huge on the plum upfront, with medium acidity, a touch of oak and brett. Nicely balanced, with a gentle but prominent acidity on the finish. Very nice.

Bouteille 500ml, gracieuseté de msjpearson, Thanks Mike! Couleur orangée voilée, mousse beige pâle laissant une fine dentelle. Arôme de levures sauvages, boisé, prunes, citronné. Goût de levures sauvages, boisé, acidité moyenne, fruité, chair et pelure de prune, légère amertume. Carbonatation élevée, corps moyen.
