Note:- this beer was the original release under the name Evolve, a red ale/amber, circa 2019/20.

A new version, with separate entry, was released in 2024 as a bitter.

Beer is constantly evolving; every brew is informed by the rich tapestry of beer that has come before it. Here is the Mad Squirrel take on one of our indiginous heritage styles. The classic red ale, brewed with floor malted barley, a modern British yeast strain and fruity hops. This is the next step forward for the style. This is Evolve, a contemporary red ale.

440ml can from Hoppily. Poured a slightly hazy medium reddish amber colour with a short-lived frothy white head. The aroma is light caramel malt, red berry fruits. The flavour is moderate bitter and sweet, with a crisp, earthy, slightly watery, mineral, light dry floral hop bitter palate. Medium bodied with average carbonation.

Rocky off white head stayed on a hazy caramel coloured still body. Hoppy aroma with a standard Bitter backdrop. Medium bodied, sharp on the palate with a clean back. Well balanced fruity tastes of berry, hops & pine with a slightly soapy finish.

Appearance is amber, effervescent, a giant foamy beige head. Aroma is malt, raisin, English hops, brambly fruit. Taste is smooth, slight hop bitterness, juicy dark fruit, cakey malt, caramel traces, bit of raisin sweetness at the end.

Keg at Mad Squirrel, High Wycombe. Amber with a white head. Cardboard, earth, wood and slime. A touch of plum jam on toast, but all the flavours are muted. For me this was further proof of my long-held belief that bitters should only ever be served on cask.

Can shared at Leightons place. From the Berko tap. A light hazed amber dark orange with a fine white head. Aroma is nutty toast, jammy, toast, some grassy brambles. Flavour is composed of semi sweet, chalky, nutty toasted malts,. Pretty weak. Palate is thin, moderate carbonation. Meh.

Can shared in Hackney - cheers to Fergus. Pours mostly clear amber with a foamy white head. Nice English ESB, some toasted malts, grains, leaves, a scattering of berries. Light to medium bodied with fine carbonation. Finishes with more toasty grains, leathery berries. Decent.

Can thanks to Fergus. It pours murky amber with a small white head. The aroma is earthy, wood, toasty grain, leather, brown bread and light caramel sweetness. The taste is dry, yet sweet, caramel, toffee, brown bread, toothy, dried fruits, burnt fruit cake and spice with a drying finish. Medium body and fine, prickly carbonation. Pretty average.

Can at home, 19/05/19. Almost clear copper to amber with a faded white covering. Nose is fruit loaf, biscuit, light spice, toffee, dried fruits. Taste comprises caramel, toasted malts, fruit slice, orange peel, grass, biscuit, dried fruits. Medium bodied, fine carbonation, semi drying close. Fine for the style.
