On 27th November 2017 we produced a bitter wort using barley, oat and rye malts similar to traditional saison brewing. This was fermented for eleven months in three large oak cider casks from Tom Oliver. Two of these casks worked particularly well together, so were blended and dry hopped. We chose Motueka (it is especially good this year) and Celeia, as these hops compliment each other very well.

Bottled Oct. 2023. Orange body, with a medium, creamy, white head. Aroma of moderate funk, wood, stone fruits, red apple, citrus, some straw. Tastes similar, a bit more acidic. Medium mouthfeel, with a quite lively carbonation. Finishes quite dry, wooden, fruity, citric, a bit funky. Lovely, balanced stuff. Didn't get much of the cider, except subtle apple notes. A quite straight, refreshing, rustic wild ale otherwise. Score: 8 / 4 / 8 / 4 / 16

Taster From bottle at home. yellow rather hazy color, small white head. smells oak, subtle funk, earthy, subtle herbs. Nice smell. full body, pearly carbonation. tastes citric, earthy, oak, tobacco, hints of apples, light spices, subtle stone fruits. finishes bubbly, lightly dry and lightly sour with notes of citrus, tobacco and earthy notes. Very nice one, rather on the bubbly side. Very good one

Bottle @ Sir Alex share. Home Turff. Pours hazy golden a small bubbly head. Wood, slight Esters and lots of grass, funk and Apple. Combining the Best of two worlds. Dry, crisp and refreshing. Bottled 2018. Lovely

75cl bottle @ beer share Christmas gathering at The Coracle, Dec 19. Pours a misty straw gold, small white head. Fresh funky wild hay on the nose. Crisp on the palate, nice wild funk with soft tart apple, gentle saison esters hints, gooseberry, straw. Excellent depth of flavour. Good stuff from Mills once again.

Bottle shared at tasting. Light orangy color with a small white head. Aroma and flavor is sourish, funky, lightly yellow fruit. Very pleasant. I like it!

Thanks Yushima for sharing! Teku showing pale straw with a finger of clean white foam. The nose shows moderately intense notes of tart brett. The palate is well carbonated and light bodied with a mild saison spiciness. Lightly tart with clean hints of cider.

Bottle from Noble Hops shared. It pours hazy golden with a medium foamy white head. The aroma is fresh and clean, bright, hay, funk, oak, mellow apple, floral, must, cracker and a touch of spice. The taste is crisp, dry, hint of tartness, musty, funky, apple skin, damp basement, oak, earthy, funk, hay, straw, hay, nip of spice, crackers, minerality, gooseberry, mild acidity and earth with a drying finish. Medium body and moderate, foamy carbonation. Nice depth of flavour and the balance works out well. Quality stuff.
