This is the most recent beer that they have intuitively collaborated on. After a year of oak ageing, a beautiful mixed fermentation Saison emerged, which was then blended with a portion of three year old lambic. Dry and oaky with subtle fruit and spicing to the fore, we believe this beer is well worth the wait.

Bottle from Ghost Whale. Opaque golden colour with a thin head. Aroma lemon citrus and fruity. Taste dry to tart fruity. Slight creamy oak and crisp body. Smooth.

Keg at the Beavertown Extravaganza, day two, 09/09/2017. A light hazed golden yellow coloured pour . Aroma is spicy lacto funk, lemon rind, light pith. Flavour is composed of light bready grains, hint of spicy lacto, vinegar. Palate is tart, frothy, prickly carbonation. Good sour, decent depth.

Bottle at Hundholmen, Bod�. The colour is hazy light orange with an off-white head. Aroma of cloudberries, forest floor, lemon, apple cider vinegar and hay. Flavour of apple cider vinegar, lemon juice, coriander, flowers, hay and forest floor. Has a slick mouth feel, medium body and a light bitterness.

Keg at Beavertown Extravaganza 2017 - London. Pours gold with a foamy, white head. Has moderate bready character, light citric tartness, nips of lemon, subtle funk, a little woody dryness. Medium bodied with fine, massaging carbonation. Finishes with more modest funk, citrus accents, some white wine. Nice one.

Small bubbly mediumlasting head, clear golden color. Aroma is slightly dry sour-ish fruity, sour grapes, mild vinegar, oak, fruit stones, flowers, minerals, alcohol, caramel, dried fruits, berry skin. Taste is slightly dry sour-ish fruity, mild vinegar, sour grapes, sorrel, oak, fruit stones, dried fruits, citrus acid, sour peach, hints of butterscotch. Medium bitterness, dry sour-ish fruity mouthfeel. Nice one.

(750ml bottle from boxbeers.dk) Pours somewhat hazy medium orange with a small white head. Aroma of white grapes, lemon, wood, oxidized wine, Brett, soft spices. Flavour of tart white grapes, lemon zest, wet hay, flowers, wood, a little vinegar, Brett, a little cat pee, tannins, slightly drying tart close with wood, cobwebs, dried flower petals, citrus rinds. Moderate length aftertaste. Light to medium slick body, very low carbonation. I see what the target is here, but for my taste I'd have liked a little more saison-level carbonation rather than old lambic flatness. I think it would have brightened the flavours a bit.

Bottle at home, split with James, 10/11/18. Murky orange with an off white covering that collapses in due course. Nose is tarte fruit, pissy knickers, funk, dry rot, damp wood, stewed prunes. Taste comprises grape must, barnyard esters, funk, acidic rise, sharp lemon, tarte fruit rinds, damp alleyway, wine barrel. Medium bodied, limited carbonation ... definitely way undercooked, drying close with balanced acidity. Decent offering flavour wise but let down by the lack of carbonation.

330ml bottle @ Chez Sophie. Pours a misty gold, white head. Crisp fresh floral nose. Taste presents a nice brustling complexity, good depth of fruit and lemony saison elements with gentle chardonnay notes. Nice.

Bottle, 1,5 years after bottling. Pours hazy yellow, with a small creamy head. Aroma is tart notes of hay, white berries and citrus peel with lemon, as well as bretty wood and tannins. Medium body, with average carbonation. Flavour is tart, with hay, grapes, white berries, lemony citrusy notes, as well as tannins and wooden brett. Dry, wooden finish.

Little hazy orange beer, creamy white head, very stable, bit adhesive, leaving some lacing in the glass. Aroma: very funky, sourish, infected, fruity, some pears. MF: soft carbon, medium body. Taste: pretty sour, grains, fruity, lots of yeast, soft bitterness. Aftertaste: some tannins, little fruity, some citrus, bit of vinegar.
