Fermentation activated by inoculum of lactic bacteria and yeasts (including Brettanomyces) that are some varieties that can be found in spontaneous fermentation. Maturation in barrique for 12 months. Addition of Burè Roca pears, an ancient Piedmontese variety now getting lost.

Tiny shortlasting head. Aroma is slightly sour-ish dry, sorrel, yeast, apple cores, minerals, bark, light malts, flowers, apple peel, hay. Taste is slightly sour-ish dry, sorrel, soda powder, mild vinegar, grass, minerals, sour apples, hay, yeast, bark. Medium bitterness, slightly watery and sour-ish dry mouthfeel. Fair enough.

On tap @EurHop (Rome). Pours acid yellow, opalescent, with a minimal head. Aroma of wild yeasts, fruits, ripe apple, pears, vinegar. Flavour is medium to light sour with a light sweet note, a bit shy and boring. Medium body, light carbonation. Not the best sour ale from Loverbeer.

On tap @ What’s Brewing 15. Pours opaque orange, with a small airy head. Aroma is balsamic vinegar, with notes of sweet fruity apples, as well as grapes, wooden brett and tannins. Full body, with soft carbonation. Flavour is very fruity with plums and pears, as well as wooden bretty notes.
