A Golden Sour Beer Aged in Oak Barrels With Honey, Chamomile and Cherry Noyaux.

At the heart of every cherry is an aromatic treat! We aged this beer on cherry noyaux for eight months to extract the almond and amaretto flavours. Our friends at Gael Glen Farm then brought a hint of sweetness in the form of fresh wildflower honey from their hives. After a sticky re-fermentation, dried chamomile flowers completed the flavour trifecta.

750ml (thx, Phill!) @ Salesforce. Appearance: hazy pale golden with a white head. Aroma: a lot of cherries and honey. Still. Whoa. Taste: along the same lines, lots of cherries and cherry pits. Acidity is still here, but it's overpowered by other falvors. Overall: pleasant.

750mL bottle. Pours murky blonde with small white head. Aroma has tons of chamomile, oak, a bit of cherry. Flavour has oak, well-moderated acidity, some chamomile, oak. Very nice, strongly sour but not in excess.

Pale, and a bit of haze. Bubbly head. The aroma drops some floral honey and a bit of that cherry. It's got a hit of cherry up front, then it heads a bit of tartness, and again some floral notes. This definitely gets tart in the finish, but it's not bad.

2019 bottle. 750mL bottle, pours a clear golden with a small white head. Aroma has a nice honey character, gentle funk, and light cherry. Flavour has a nice semi-fermented honey character, barnyard funk, a touch of chamomile, and a touch of cherry. Lots of honey and funk that works well together. Acidity is pretty low, which is appreciated. Very good.

Bottled. Hazy golden, small head. Oaky tartness meet herbal spices up front. Tart and citric with medium body and rounded mouthfeel. Citric acid and vinegar, chamomille and oak. Low bitterness.

Bottle: Poured a slightly hazy color ale with a large foamy head with good retention and light lacing. Aroma of tart notes with some acidic notes also noticeable. Taste is a mix of tart notes with some acidic notes, some light honey notes with some cherry notes clearly perceptible. Body is above average with good carbonation. Enjoyable sour but a bit more balanced would remove some of the acidic notes and increase drinkability.

A hazed blonde ale with a thin white head. In aroma, sweet fruity malt with light chamomile, honey final, alcohol warmth, very nice. In mouth, a nice sweet fruity malt with light acidity meeting honey, light chamomile, very nice and complex. Bottle at Pushkinwows Xmas 2018 gathering.
