This beer is the favourite of Laurent Agache, who has always adored stout. “But I mean real Stout, not oversweet gassy liquids!”.
With an aim of finding a fairly marked coffee after-taste, we have chosen to use the most torrefied barley malt that can be found on the market – Black malt at 1400 EBC. As this malt is a bit acrid, we have “corrected” it by using another slightly caramelized malt (150 EBC), and some brown sugar. So that the hops can exist alongside these strong caramelized and torrefied malt flavours, we have mainly opted for the strong American hop, Tomahawk.

Bottle thanks to Fergus. It pours deep brown with a small beige head. The nose is toasty, earthy roast, liquorice, wet dog, musty paper, berry and dark fruits. The taste is bitter-sweet, red fruits, earth, toast, mild sweetness, ash and light peppery action. Medium body and fine carbonation. A bit old and musty on the nose, but tastes ok.

Bottle shared in London - thanks to Fergus. Pours clear dark reddish brown with a creamy tan head. The nose has some ripe dark fruits, berries, toasty grainy grain. Medium sweet flavor with burnt leaves, damp earth, aged berries, grainy bread. Medium bodied with average to lively carbonation. Finishes fairly sweet with more toasty and leafy hops, dried berries, burnt sugars, bread. Fine.

330 ml bottle from Beers of Europe. Pours black with a massive tan head, keeps going and growing out of the glass. A touch over-carbonated then. Aromas of soy sauce, salt liquorice. Taste has light chocolate, more liquorice and soy. Tarry too. Medium body, sweet finish.

Appearance is dark brown, ruby tinges, with a lasting off white creamy head. Aroma- milky coffee, chocolate, dark fruit undertones. Taste- roast malt, coffee, cocoa bitterness, burnt toast, liquorice hints. Nice, slightly lacks body.

A close relative of their Tournay de Noël, this is even darker and more roasted and thus qualifies as a stout. Almost black colour, deep beige head; dark fruits, oily mouthfeel, bitter chocolate, yeasty notes, full roasted coffee-like bitterness in the finish, mouth-filling. More than decent.

Great beer. Like a Belgian stout, with not as sweet. Has a pleasent dry taste of roasted malt and coffee. Very good.
