Big Bad Baptista is inspired by traditional Mexican coffee, Café de Olla, which is served with cinnamon and piloncillo, an unrefined sugar. The Cinnamon adds another layer of complexity and accentuates the earthy character of Mexican Coffee, but more importantly, it captures the essence of a place and its culture.

(Bottle, vintage 2018. Thanks to Håkan) Black colour with creamy, beige head. Malty, roasted nose with fresh coffee, dark chocolate, vanilla, cinnamon, nutmeg and a touch of bourbon. Malty, roasted, fairly sweet taste with notes of coffee, dark chocolate, cacao, vanilla, cinnamon, liquorice, bourbon, oak wood and a balanced coffee bitterness in a sweetish finish. Full body, quite sweet. Rich and powerful, still smooth and in great balanced. Lovely beer!

22oz bottle, 2018 vintage release #14, drunk 9/14/22. Ebony, undetermined clarity. Small, but well-retained, tan head. Beautiful espresso and mild cinnamon nose with hints of light vanilla. Milk chocolate with light raisin and fudge-like sweetness. Coffee through and through, but it's so well-done with nothing acrid, overly acidic or even that dominant. Still allows the barley and fruity yeast alongside the vanilla. No alcohol noted, either. Touch of oxidation with light molasses, dark chocolate, cacao, soft vanilla and nicely attenuated maltiness. Espresso beans, roasted acidity and light alcohol (not hot/sharp). Love the attenuation, lack of syrup, sugar, or even big fudge. The adjuncts are tastefully done and it doesnt show the big alcohol. A lot to like here and I can see why it's so highly regarded.

2017 cellared for 4 years. Pours black with small brown head. Cinnamon and chocolate dominate the nose. Also on the flavor with barrel. Baker’s chocolate in the mid palate.

Bottle picked up from Beerdome Webshop, Grootegast, Netherlands (*I think that this is where I got this from) Consumed at home Saturday 3rd April 2021 watching a film on Netflix. We had Prawn, Clam, Scallops, Feta and Tomatoes and a homemade Apple Strudel. Pours dark brown with a light beige head. Bottle, many thanks Werckmeister! Unclear darkest brown color with beige head. Aroma is mostly light whisky with spice and hot peppers also noted. Nice in the mouth, heat from peppers shows, the mouthfeel isn't too thick some warmth from the abv, which I think reads as 10.8%. Spices are key here, chocolate of course is an ever present, along with the coffee however it is perhaps not quite the beer I thought it would be, good, in fact v.good but not great.

Bottle. Pours inky black, medium creamy tan head, decent lacing. Aroma is rich chocolate, cinnamon, bourbon, vanilla, espresso. Flavor is fairly sweet, medium bitter, decent chili spice. Full body, silky. Really good

Bottle (2018 Release #14) pour from Total Wine & More, Burlington. Appearance is opaque black with trace sparkle, nice viscosity, ephemeral thin film of fizzy light brown head and no lacing. Aroma is strong cinnamon over roasted malt, vanilla, chocolate, faint whisky. Taste follows aroma with strong cinnamon over roasted malt with lesser vanilla and a hint of whisky. Mouthfeel is full bodied with thick, highly viscous texture, soft carbonation and strong finish as taste. Overall, mouthfeel is really something but when you lead with that for a world-class beer, something went wrong. 2018 is too far beyond its prime so barrel and coffee are almost absent. Will have to try fresher at some point.

Crowler from Holiday Market. Pours a pitch black with a finger of brown head that lingers. Big cacao nib and cinnamon aromas on the nose with some dark coffee notes on the back of the nose. More coffee, cinnamon and light vanilla bean on the palate. Drying as it goes down with warming cinnamon notes that linger on the finish. ABV hidden really well. This is probably a 2017 keg and it is drinking very well in 2020.
